You might’ve seen me posted similar before - but this time it’s re-visiting the products by original 平戸 Hirado Sweets shop “Tsutaya #蔦屋 ”, opened since 1502, which introduced their form of Castella カステラ via Portuguese preachers into North Nagasaki in the mid 1550’s. It’s called #Casdoce ( #カスドース ) , but some other shops in Hirado call it Casporu ( #カスポール ).

•The Egg yolk doce sweets are baked without Sugar. They are then boiled in hot Sugar Syrup to coat, the expensive sugar itself introduced into Japan by the same traders. Locally, they consider this the most original Nagasaki-Hirado form of Castella, although it is basically a religious sweet invented by Portuguese nuns almost totally similar with a Papos de Anjo de Mirandela #PaposdeAnjo , or egg candies in Macau.
•The currently better marketed Nagasaki-City version of Castella cake is said by Hirado locals to have developed more than 100+ years afterwards on 出島 Dejima Island of Nagasaki, due to forceful removal of European traders to a confined island 125Km away, before later on completely closing Japan off in segregation for 200 years (except with the Dutch & Chinese tradings) ~ hence also why some Hirado shops call the latter Cake like recipe as the ‘Nagasaki City 200 Years old version Castella’.
•It is also quite obvious to me both versions are fairly different, as the latter is more like a Castille Kingdom cake, which is more of a Spanish recipe resembling older methods of Sobaos Pasiego. The Hirado version is more of a Portuguese doces conventuais ‘Sweets’ snack 🤔😬
