Vegetarian ramen (and meat ramen!) in Kyoto Station at Taishoken.
TIPS FOR BEING VEGETARIAN IN JAPAN: https://youtu.be/x7PXiMf0OwM
The 10th floor of Kyoto Station is full of ramen restaurants. I was really surprised to stumble across one that had vegetarian ramen, which is really unusual in Japan. Most ramen noodle dishes contain dashi (fish stock) or have meat (pork) based soup, but here the stock is vegetarian. They also serve regular meat ramen, and the restaurant was founded by the inventor of tsukemen (dipping noodles).
The restaurant is Yamagishi Taishoken, on the 10th floor in Kyoto Station (a couple of branches elsewhere in Japan too, including Ikebukuro in Tokyo): https://www.tripadvisor.co.uk/Restaurant_Review-g298564-d3779996-Reviews-Taishoken_Kyoto_Ramen_Koji-Kyoto_Kyoto_Prefecture_Kinki.html
