◆Ginger pork Shogayaki
iIngredient ( servings 2 )
250g thinly sliced pork loin
150g red cabbage (julienned)
6 cherry tomato
1/2 cucumber (sliced diagonally)
2 teaspoon vegetable oil
proper amount of all-purpose flour
salt and pepper to taste
A. 2 tablespoon soysource
A. 2 tablespoon cooking sake
A. 2 tablespoon sweet rice wine(mirin)
A. 2 teaspoon sugar
A, 2 teaspoon grated ginger
1,Mix A ingredients, soysource, cooking sake, sweet rice wine, sugar and grated ginger in a bowl.
Salt and pepper the pork, then coat it with flour and shake off excess.
2,Pour vegetable oil into warmed frying pan.Add the pork and cook until the bottom side is golden over medium-high heat. Remove excess oil with kitchen paper.
3,Add A mixture and stir until thickened over medium heat. 4,Serve ginger pork with cabbage, cucumber and cherry tomato and garnish with mayonnaise or sprinkle shichimi (japanese mixed spices) if desired.
★cooking tips!
Garnish cabbage or lettuce or sliced onion instead of red cabbage.
If you don’t remove the excess oil before you add the source mixture, ginger pork will be done oily .

This Onigirazu with Tori Soboro (sauteed ground chicken) and Iri Tamago (finely scrambled egg) is visually appealing and the savory teriyaki flavor goes great with the rice. Tori soboro and iri tamago can also be used as fillings for Onigiri rice balls or toppings for a donburi rice bowl.
How to Make Tori Soboro Onigirazu

(serves 3)
- Tori Soboro -
150g Ground Chicken Thigh (5.3 oz)
1 tbsp Sugar
1 tbsp Soy Sauce
2 tbsp Sake
10g Ginger Root, grated (0.3 oz)
- Iri Tamago -
2 Eggs
1 tbsp Mirin or substitute: ½ tbsp Sugar
A pinch of Salt
Pickled Nozawana, coarsely chopped
Toasted White Sesame Seeds
Steamed Rice (approx. 150g/5.3 oz)
Toasted Nori Seaweed
Salt
* When you store the tori soboro in the freezer, partially freeze it and then shake the container to separate each piece.
This will help you to take out only the amount you need when it's completely frozen.

<鶏そぼろの保存の仕方>
容器に入れて冷凍し、完全に固まる前に取り出して容器を振ってバラバラにします。再度冷凍庫に入れて完全に凍らせます。バラバラにして凍らせておくと必要な量をいつでも取り出せます。

Ingredients I used (3 ~4 bowl)
: 200g ground chicken
: 50g green onion
: 5g ginger
: 1 tsp flour
: 1 tbsp water
- seasoning sauce -
: 2 or 3 tbsp soy sauce
: 2 or 3 tbsp mirin
: 2 or 3 tbsp sake
: 1.5 or 2.5 tbsp sugar
- egg strips -
: 1 egg
: 1 tsp katakuri starch
: 1 tsp water
- topping -
: Yuzu citrus
: Kizami nori (shredded seaweed )
