蟹炒年糕
材料
📌 蟹一大隻或兩隻中size (肉蟹糕蟹都可以)
📌 韓國年糕(一塊塊或一條條都可以)
📌 蔥適量
📌 薑適量
📌 蠔油一湯匙
📌 紹興油適量
📌 老抽適量
📌 糖適量
📌 醋適量
📌 麻油適量
做法
1. 蟹先切件,洗乾淨。韓國年糕用水浸軟。薑,蔥,切絛。
2. 準備一隻碟,灑上生粉,把蟹腳蟹肉部份撲上生粉,蟹螯也撲上生粉。蟹汁留起備用。
3. 油落鑊,燒紅鑊,把蟹腳蟹肉部份向油,蟹腳向上,再落蟹螯,只煎,不要炒,盡量不要郁動。之後翻轉另一面再煎,見熟了就盛起在碟上,備用。
4. 鑊不用洗,直接落薑,蔥頭爆香,加入蟹汁,把已煎好的蟹再落鑊,兜勻,再加入已浸軟的韓國年糕,放少許熱水,麻油,紹興油,老抽,蠔油,糖,醋,再放入蟹蓋,之後煮至收乾汁,稍為兜勻,上碟,即成。

Stir-Fried Crab with Rice Cakes

Ingredients:
Mud Crab - 2 (Clean and chop into pieces. Pat thin layer of corn flour/starch on the parts that have crab meat to lock in moisture and sparingly on other parts. Do not flour crab shells. Save the crab liquid and tomalley.)
Rice cakes - (soak in hot water to separate them and absorb more flavor when cooking.)
Seasoning ingredients:
Ginger - sliced
Shallots - sliced
Green onion - bottom white parts
Hot water
Sesame oil
Shaoxing wine
Dark soya sauce - to taste
Oyster sauce - 1 tbsp
Sugar - to taste
Chinese red vinegar - to taste (to add more crab flavor)
Methods:
1. Heat up a wok and add oil. Add crab pieces with the meat sides facing down to lock in moisture. DO NOT add the crab shells yet. DO NOT touch time or avoid flipping them too many times. Cook until they turn bright red then transfer to a plate. Set aside.
2. Add ginger, shallots, green onion (bottom white parts), and stir-fry until fragrant. Add in any liquid &/or tomalley from the crabs.
3. Return the partially cooked crab pieces back to the wok. Add in rice cakes, hot water, sesame oil, and Shaoxing wine, dark soya sauce, oyster sauce, sugar, and Chinese red vinegar. Place the crab shells on top and cover the wok with a lid.
4. Cook until the sauce has reduced. Transfer to a serving plate. Serve.

📌豆乾-卷型(浸淋後再榨5-6次, 用豆乾代替了
江瑤柱)
📌生菜(預先擺放在上碟用的碟邊)
📌四粒乾蔥
📌四粒蒜頭
📌四片姜
調味料:
📌蠔油 2湯匙
📌老抽 1 湯匙
📌糖 小許
📌紹興酒
📌麻油
📌菇粉
📌粟粉(用冬菇水去開)
做法:
1. 燒熱個鑊,加油. 放入姜和蒜頭炒香至蒜變小小金黃色
2. 轉小火放入蠔豉兩邊煎香後, 將蠔豉拿起備用
3. 現在蒜頭應該變啡色, 加入燒肉和姜、蒜一起炒幾下放鑊的一邊, 另一邊放入冬菇分開炒
4. 將全部(3)一起炒幾下,再加入蠔豉炒, 然後加入冬菇水
5. 加入蠔油, 小小糖, 老抽再將髪菜平均分佈在鑊面後, 加入豆乾和小小菇粉
6. 再加麻油和小小酒入(5), 然後加粟粉水
7. 煮滾可以起鑊,將全部(6)倒進預先鋪上了生菜的碟上面

Braised Dried Oyster with Fat Choy

Ingredients:
Dried oysters - (wash, especially the sides, soak a bit and not too long to avoid loosing the flavor, and steam for ½ hour)
Dried mushrooms - (wash, soak to rehydrate, and steam for ½ hour)(Save the water from soaking the mushrooms.)
Chinese roast pork belly - sliced (this is for more flavor from the pork belly skin and aroma)
Dried bean curd rolls - (soak, rinse, squeeze 5 – 6 times until dry, and cut into chunks)
Fat Choy - (soak, wash and rinse a couple of times, and lastly mix with a bit of oil and set aside)
Seasoning ingredients:
Ginger - sliced
Garlic - sliced
Green onion - sliced
Mushroom water (from soaking mushroom)
Oyster sauce - 2 tbsp or more to taste
Sugar - to taste
Dark soya sauce - 1 tbsp or taste
Mushroom seasoning powder - a sprinkle
Corn flour/starch and mushroom water - to thicken sauce
Shaoxing wine
Sesame oil
Garnish
Green lettuce leaves - (arrange in a circular pattern on the serving plate)
Methods:
1. Heat up a wok and add oil. Add in and ginger, garlic, and stir-fry until fragrant.
2. Add in dried oysters and stir-fry until fragrant on LOW heat. Transfer to a plate and set aside. This will make the dish more flavourful.
3. Add in Chinese roast pork belly and stir-fry a bit. Add in mushrooms and stir-fry until they absorb all the garlic oil and fragrant.
4. Return the dried oysters back to the wok and stir -fry.
5. Add in mushroom water (saved earlier when soaking the mushrooms), oyster sauce, sugar, and dark soya sauce.
6. Add in fat choy by spreading evenly in the wok.
7. Add in dried bean curd rolls, sprinkle in mushroom seasoning powder, mix well and bring to a boil.
8 Drizzle in Shaoxing wine and sesame oil.
9. Add in corn flour/starch and mushroom water mixture to thicken sauce. Mix well and transfer to the serving plate lined with green lettuce leaves.
10. Arrange the dried oysters in the center of the serving plate and the mushrooms around the dried oysters. Serve.

麵團材料:
自發粉 140gr. (可用麵粉140 gr. + 1茶匙發粉)
牛奶 半杯
牛油(溶) 5湯匙
肉桂餡材料:
牛油(溶) 3湯匙
黃砂糖 75 gr.
鹽 少許
粟粉 1湯匙
玉桂粉 1湯匙
糖粉 (裝飾用)
做法:
1. 座枱攪拌機裝上打麵團的勾. 自發粉和牛奶用攪拌機稍為拌勻,加入溶牛油再打至成麵團
2. 在麵團攪拌同時,把所有肉桂餡材料放入大碗來拌勻備用
3. 枱面鋪上矽膠墊,噴少許橄欖油。把打好麵團移到矽膠墊上,用手磋3分鐘 (如果不想用手磋,可用攪拌機打多2-3分鐘)
4. 用麵棍把麵團碾開至半厘米厚,把肉桂餡平均鋪在麵團上(如肉桂餡稍為硬身,可先用微波爐加熱少許使其軟化)
5. 肉桂餡掃均後,把麵團捲成一條,然後用矽膠墊捲好放入冰箱雪至硬身(約5分鐘)
6. 肉桂卷硬身後取出切片(大約1-1.5厘米一片)
7. 放入已噴油的氣炸鍋焗盆內,用180度焗7分鐘後,把玉桂卷反轉再焗5分鐘後取出, 灑上糖粉即可食用。

Cinnamon Rolls

Ingredients:
Self-raising Flour - 140g (or use all-purpose flour and add 1 tsp of baking powder)
Milk - ½ cup
Unsalted butter - 5 tbsp (melted)
Cinnamon filling ingredients:
Unsalted butter - 3 tbsp (melted)
Brown sugar - 75g
Salt - a sprinkle
Corn flour/starch - 1 tbsp
Cinnamon powder - 1 tbsp
Parchment paper
Methods:
1. In a bowl, add in unsalted butter, brown sugar, salt, corn flour/starch, cinnamon powder, and mix well. This is the cinnamon filling. Set aside.
2. In a stand mixer bowl, add in self-raising flour, milk, melted butter, and mix well until it becomes a dough. Add more self-raising flour if necessary. You may hand mix and knead to a dough.
3. Roll the dough into a thin rectangle sheet.
4. Spread cinnamon filling prepared in Step 1 evenly onto the dough sheet.
5. Tightly roll the dough up and seal both ends of the roll, wrap in a parchment paper, and freeze it for a couple of minutes in the FREEZER.
6. Spray oil in the basket of the air fryer.
7. Once the dough is slightly hardened, unwrap the parchment paper, slice into equal size pieces, and transfer them into the air fryer lined with perforated parchment paper.
8. Bake them at 180C (356F) for 7 minutes then turn them on to the other sides and bake for another 5 minutes. Sprinkle icing sugar on top right before serving.
If using the oven, reduce the butter and sugar and increase the cinnamon powder amounts

✅ 3g salt

✅ 50g crab meat
✅ 20g white mushroom
✅ 20g onion
✅ 80ml stock
✅ 3g salt
✅ 2g black pepper powder
✅ 15g cooking oil
𝐑𝐞𝐝 𝐩𝐞𝐩𝐩𝐞𝐫 𝐧𝐮𝐭 𝐬𝐚𝐮𝐜𝐞 (𝐑𝐨𝐦𝐞𝐬𝐜𝐨 𝐬𝐚𝐮𝐜𝐞)
✅ 200g oil-soaked red bell pepper
✅ 1 clove garlic
✅ 135g roasted cashew nuts
✅ 2 TBSP tomato paste
✅ 3 TBSP sherry vinegar

✅ 1/2cup extra virgin olive oil
✅ 2g salt (or pinch to taste)

✅ 100g chicken stock
✅ 2-4g xanthan gum

DIRECTIONS
𝐒𝐪𝐮𝐢𝐝 “𝐫𝐢𝐬𝐨𝐭𝐭𝐨”
1. Clean the squid and use only the body
2. Finely diced into small cubes
3. Add into simmering basket with 1300 g water (enough to cover the squid), add salt and bring to boil (about 12 minutes)
3. Add squid and blanch in simmering basket, 2min/100c/sp 3.5
4. Remove and keep chilled in the fridge for use later
𝐂𝐫𝐚𝐛 𝐝𝐮𝐱𝐞𝐥𝐥𝐞𝐬
1. Add mushroom and diced onions into the bowl
2. Add oil and stir fry 5m/120C/sp2
3. Put in the crab meat, add salt and pepper to taste, cook for 3min/100c/sp1
4. Pour in the stock and cook without MC cup and reduce 3min/varoma/sp1 (add another min if the mixture is still wet)
5. Remove and store in the fridge
𝐒𝐩𝐢𝐧𝐚𝐜𝐡 𝐟𝐨𝐚𝐦
1. Drench the spinach. Cook at 4m/Varoma/reverse
2. Place the spinach in a cheese cloth and squeeze out all residual water until the spinach becomes a dry ball
3. Heat up the chicken stock at 2min/100c/speed 2
4. Add the “dried” spinach
5. Blend at speed 1min/1-10
6. Add xantham gum
7. Scope mixture into a pipping bag (optional or into a foam gun with Nitrogen)
𝐑𝐨𝐦𝐞𝐬𝐜𝐨 𝐒𝐚𝐮𝐜𝐞
1. Place the nuts into the bowl and mill 10sec/speed 7
2. Add the rest of the ingredients and mix 10sec/speed 5.
Drizzle the oil through the lid hole while mixing
3. Scrape down and add seasoning to taste and mix another 10sec/sp 4 or until you achieve the consistency you desire
TO SERVE
1. Stack the varoma dish
2. Place the squid and romesco sauce into a metal steaming dish and mix with a spoon
3. Place the crab duxelles in a metal steaming dish
4. Cover both dishes with a baking paper to prevent water from dripping onto the dishes
5. Place both dishes into the varoma
6. Steam at 10min/varoma/speed 3.5 to heat up the mixtures gently
7. Use a cookie cutter to arrange the components onto a plate (refer to video). Serve with spinach foam pipped next to the "risotto" and crab duxulles

這次做的一鍋到底番茄熱狗義大利麵,番茄醬是用現打的番茄做的,味道上沒有番茄罐頭濃,顏色也沒有那麼紅,但是口味上健康清爽,有了香香的熱狗陪襯,應該會受小朋友喜愛:)麵一開始就放進去一起煮,建議用寬一點的麵條!
周末就用這個跟家人朋友一起分享吧~如果喜歡口味更有"番茄味",可以加一湯匙番茄醬一起煮!這道菜我做的時候,最後鍋中湯汁還是蠻多的,只要麵軟,番茄味道八住麵了,就可以起鍋了~
Procedures:
1.Cut 3 beef tomatoes into cubes, blend into paste using a blender. Transfer the paste into a pot, add in shiitake mushrooms, white beech (bunapi) mushrooms, pasta,sliced hotdog, onion, 250cc of chicken stock, and a few pieces of basil leaves
2.Put the pot lid on, simmer over low heat for 5 minutes, then remove the lid and give the dish a good stir, and check if the pasta has softened. Once the pasta has softened, continue reducing the sauce with the lid off. Mix in parmesan cheese and add half a teaspoon of salt to taste. The pasta is ready to be served.

我が家の圧力鍋はだいぶ年季が入っていますので、できるだけお見せしたくない気持ちがはたらいてしまった編集で鍋が見えづらい状態になっております。
*レシピ*(500gのお肉から300gのプルドポークができます)
1.豚の肩やもものブロック肉 500gに塩胡椒とすりおろしたニンニクをすり込む。
2.鍋に玉ねぎのスライス125g、にんじん 1/2本(50〜75g)を入れ、水 300mlを入れる。
3.(1)の肉を入れる。
4.蓋をして、火にかける。圧力がかかったら弱火にし50分加熱する。
5.加熱が終わったら火を止め、自然に圧力を下げる。
6.肉を取り出し、細かくさく。
7.残った野菜とスープを使って、ソースを作ります。細かく砕き、ケチャップ 35g、ソース 35g、醤油 5gを入れ中火で13分ほど煮詰める。
8.でけた。
(6)の肉 100gに(7)のソース75gを絡めてつかう。粉チーズや黒胡椒をかけてもおいしい。必要なら 追いソースをする。

Pulled Pork in Various Arrangements. Easy with a pressure cooker. When block meat is cheap, this is the way to go!
I stewed a block of pork with vegetables to make pulled pork that can be broken up into small pieces. You can use it in a variety of ways, such as on bread, over rice, or with pasta.
This time, I will introduce avocado hamburger, which is a typical American dish, and Japanese egg on rice.
My pressure cooker is getting old, so I didn't want to show you as much as possible, so it's hard to see the pot in the editing.
*Recipe* (from 500g of meat you can make 300g of pulled pork)
1.Rub 500g of pork shoulder or thigh block with salt, pepper and grated garlic.
2.Put 125g of sliced onion, 1/2 carrot (50-75 g) and 300 ml of water in a pot.
3.Add the meat from (1).
4.Cover with a lid and heat. When pressure builds up, reduce heat to low and cook for 50 minutes.
5.After heating, turn off the heat and let the pressure drop naturally.
6.Take out the meat and chop it into small pieces.
7.Make the sauce with the remaining vegetables and broth. Break into small pieces, add 35g of ketchup, 35g of sauce, and 5g of soy sauce, and simmer over medium heat for 13 minutes.
8.Done. Use 100g of meat from (6) and 75g of sauce from (7). It's also delicious with grated cheese and black pepper. If necessary, add additional sauce.

材料:
豚ひき肉 100g
しめじ 1パック
エリンギ(粗みじん切り)1パック
玉ねぎ(粗みじん切り)1/2個
トマト(粗みじん切り)1個
にんにく(みじん切り)1片
塩 ひとつまみ
コショウ 少々
サラダ油 小さじ1
バター 10g
A水 200ml
Aカレールウ(刻む)50g
Aウスターソース 小さじ1
ごはん 茶碗2杯分
細切りチーズ 適量
卵 2個
イタリアンパセリ(みじん切り)少々
ブラックペッパー 少々
作り方:
1. フライパンにサラダ油、にんにく、豚ひき肉を入れて、塩・コショウを振ったら中火にかけ、肉の色が変わるまで炒める。
2. 玉ねぎ、トマト、石突きをとってほぐしたしめじ、エリンギ、バターを加えて、玉ねぎが透き通るまで炒める。
3. (2) に (A) を加えてひと煮立ちさせる。沸騰したら弱火にして蓋をしめ、15分ほど煮込む。
4. 蓋をあけて、再び中火にして水分が飛ぶまで炒める。
5. 耐熱皿にごはんをしき、細切りチーズをたっぷりとのせる。(4) をのせて、中央にくぼみをつくって卵をのせて、180℃のトースターで10-15分焼く。

Servings: 2
INGREDIENTS:
100g ground pork
1 pack shimeji mushroom
1 pack eryngii mushroom (diced)
1/2 onion (diced)
1 tomato (diced)
1 clove garlic (minced)
Some salt
Some pepper
1 teaspoon vegetable oil
10g butter
200ml water
50g curry roux (chopped)
1 teaspoon worcestershire sauce
2 bowls steamed rice
Some shredded cheese
2 eggs
Some Italian parsley (chopped)
Some black pepper
PREPARATION:
1. Heat vegetable oil in a pan and stir garlic and ground pork over medium heat. Season with salt and pepper.
2. Add diced onions, tomatoes, shimeji, eryngii and butter into the pan. Cook until onions soften.
3. Add water, curry roux, and Worcestershire sauce into the pan and bring to a boil. Turn the heat to low and shimmer for 15 minutes with a lid on.
4. Take off the lid and turn back the heat to medium. Stir to reduce.
5. Put steamed rice in an oven-safe dish. Put shredded cheese. Spoon curry (4) over the rice. Make a little dent in the center where you put an egg into. Place the dish in a toaster oven. Bake 10 to 15 minutes at 180℃ (355°F).
6. Sprinkle with some Italian parsley.

■卵マヨベーコンチーズトースト

材料:
食パン 1枚
卵 1個
マヨネーズ 適量
スライスチーズ(溶けるタイプ)1枚
ベーコン 1枚
ドライパセリ 適量
作り方:
1.食パンの縁に沿って、中央をスプーンで窪ませる。
2.縁にマヨネーズを塗って土手を作る。
3.ベーコンを1センチ幅にカットする。

1 ham slice
20g shredded cheese

2. Heat butter in a pan over medium heat. Pour the batter (1) onto the pan.

2 egg

1 bacon strip

PREPARATION
1. Using a spoon, create a square indentation in the middle of the bread.
2. Apply mayonnaise on the edges.
3. Cut a strip of bacon into 1cm pieces.
4. Put an egg in the center of a bread.
5. Put bacon pieces and a cheese slice over the egg. Toast for 4 to 5 minutes. (You can use aluminum foil to cover the bread, so it won’t get burnt.)
6. Sprinkle with some dried parsley.

50g macaroni
1 boiled egg
1/2 canned tuna

2. Mash a boiled egg with a fork in a bowl.
