If you have never tried Sambal Sotong before, you're missing out :) Roland and I love to eat at this stall along Braddell Road in Singapore that serves up really really good Sambal Stingray and Sambal Sotong. Unlike some stalls in Singapore, this stall is very generous with their sambal chilli so that every bite of the fish or sotong always have sambal chilli. You can even request more sambal chilli from them and they won't even show you a black face or reject you. Nice people! Roland has created this sambal chilli and sambal sotong recipe using their chilli as reference. I would say his recipe is pretty spot on and if you're a lover of sambal chilli dishes, you really gotta make a batch of the chilli at home so that you can just eat it with rice or use it to cook other dishes.
