Cutting a whole yellowfin tuna in 5 minutes/ Sashimi - Taiwanese Street Food

地中海風味家常鮮魚湯(Mediterranean Fish Soup)

一週七天有太多美食可以換著吃，昨天吃羊肉🐑今天吃海鮮🦞，這樣的日子算不算是好日子！😄

跟大麥町聊天時問說；歐洲沿海的國家不少，為什麼奧地利海鮮選擇性這麼少？而且品質也不是頂優，價錢又貴？

大麥町回說；奧地利人不特別愛吃魚。

哪裡是不愛吃，我想到主要是價錢高吧！

後來想想，奧地利進口的海鮮選擇性應該不少，只是我住在小城鎮，如果到維也納只要有錢有什麼吃不到！也是。

有錢人吃珍貴的海鮮，平常百姓就吃平常的吧，雖然手上的海鮮不多，一樣料理出鮮美的滋味！👍😄

食材：
花枝⋯視大小酌量。切刀花
糙黃蓋鰈 (Yellowfin sole)⋯魚片適量
海篸⋯2根。切塊
紅蘿蔔⋯視大小酌量。切片或丁
洋蔥⋯1個 切丁
夏南瓜（櫛瓜）⋯視大小酌量

番茄糊⋯1/2大匙
蕃茄泥
魚高湯（或水）
普羅旺斯綜合香草⋯1大匙
鹽、糖黑胡椒粉
月桂葉⋯2片。切片
白酒⋯50 ML
檸檬🍋。切片
油⋯3大匙

優格⋯2大匙（或蛋黃醬）

做法：
1、熱鍋加油燒熱...放入洋蔥炒至透明，加入紅蘿蔔翻炒之後，加入蕃茄糊拌勻，淋入白酒煮一分鐘讓酒精散發，加入蕃茄泥一罐，魚高湯適量，馬鈴薯丁、月桂葉、糖、少許的鹽，乾香料，蓋上鍋蓋煮至紅蘿蔔以及馬鈴薯柔軟入味。

出菜之前放入夏南瓜、檸檬片（保留兩片）煮至柔軟後.....再放入海鮮煮至熟成，最後調味。完成。

魚湯裝碗後放上一片檸檬，勺一大匙酸奶，搭配白麵包。

如果有大蝦，或是鮮蛤...等海鮮會更棒！👍（我缺貨）😄

如果有大蝦，蝦殼不要丟掉歐！
在煸洋蔥時可以同時煸蝦殼，跟湯汁一起熬煮，下海鮮前挑出來。這樣煮出來的味道簡直是龍蝦湯的姐妹版！😄
