Here’s the recipe!🍔🥩🧀
For 2 patties (漢堡排)serving (around half pound beef)
Mix chopped rosemary and 2 chopped shallots , 2tsp Worcestershire sauce(喼汁)into the meat and season with garlic salt , pepper .
Add oil to pan , and sear the patties 3-4 min on each side for medium. ( I seared longer because can’t have raw meat)
Add cheese on top when flipped over . When done place patties on a plate, cover it lightly with tin foil .
In the same pan , add some butter and sear the chopped mushrooms, along with some more rosemary , shallot .add salt pepper. After 3-4 min , add in 3 tbsp of beef stock , turn stove on high and cook until the sauce is thickened .
Then place patties and mushroom together to form your burger ! Enjoy ! 🤗

今天做了昨天準備好的鮭魚跟rouget塔塔
連續兩天沒開爐子了超爽的,要不然每次都要刷超燙鐵板
那個溫度熱到水上去不會瞬間蒸發,會變成一顆顆小水珠跑來跑去的
那種,然後再用砂紙把髒髒的地方刷掉,照片裡面黑黑的地方,
我們稱piano,只要有開爐就要刷,要是一不小手滑貼在上面,就......超噁爛的
第一種比較鮮艷的是鮭魚塔塔
鮭魚切丁加橄欖油,鹽,檸檬汁,乾蔥,tabasco,蒔蘿拌勻之後在上面鋪上一層蔬菜丁,有小黃瓜,紅甜椒,黃甜椒,紅洋蔥,櫛瓜,加檸檬汁,鹽,橄欖油,Worcestershire(我不知道這個中文是什麼ㄟ?英式辣醬油嗎?)
還有一點tabasco,最後旁邊在淋一點蒔蘿油醋,上面擺上蒔蘿跟baby紫蘇,搞定
第二種是紅石榴加橄欖油,檸檬汁之後醃一下,準備rouget切丁
在加入西洋梨,拌入橄欖油,鹽巴,tabasco,紅石榴,拌勻之後
在上面放上茴香沙拉,旁邊擠上用葡萄柚,吉利丁,蛋白,在加入氮氣
擠出來的sauce
chef說魚最重要的就是要新鮮,所以切魚的時候我們要準備一個冰塊水在放上一個小盆子把魚肉放進去避免他降低溫度
其實,做久了就可以理解為什麼法國料理那麼貴,每一樣東西,除了只取精華之外,也很花時間,好比說第一個塔塔上的蔬菜丁,要切一樣大小,就花了不少時間,還有魚肉的處理,去皮,去油,拔刺,每一道料理的背後,都是付出不少的時間在處理每一個細節,所以,希望大家吃法國菜的時候,不要在嫌盤子大菜那麼少吃不飽之,又很貴之類的,因為你的每一口都是食材中最美麗最值得你吃的地方

Party Food - Buffalo Wings 水牛城辣雞翼
Ingredients:
Chicken Wings --------------------------------------- 8 pcs
Chicken drumsticks ------------------------------- 8 pcs
Sauce Ingredients:
Unsalted Butter --------------------------------------- 3 Tbsp
Frank's original Cayenne Pepper Sauce -- 5 Tbsp
Tomato Sauce -----------------------------------------1.5 Tbsp
Paprika --------------------------------------------------- 1 Tbsp
Chili Powder --------------------------------------------1.5 tsp
Garlic Powder ------------------------------------------ 1 tsp
White Wine Vinegar --------------------------------- 1 tsp
Tacasso --------------------------------------------------- 1 tsp
Worcestershire Sauce ----------------------------- 1/2 tsp
Ground Black Pepper ------------------------------- 1/2 tsp
Sea Salt ---------------------------------------------------- 1/4 tsp
Method:
1. Put the butter into a saucepan and cook in medium heat until it melts.
2. Turn the heat slightly lower and add the remaining sauce Ingredients into the saucepan. Stir and combine. Remove the pan from heat and set aside. Re-warm just before coating the wings.
3. Heat up the grill pan and cook the wings on both sides until crust is golden brown.
4. Coat the wings with the warmed sauce and transfer into baking tray.
5. Put the wings into a preheated oven (200℃) and cook for 18 minutes. Serve immediately with Blue cheese dressing.
Blue Cheese Dressing:
Garlic ----------------------------- 1 Clove
Sour Cream -------------------- 1/3 Cup
Mayonnaise -------------------- 1/3 Cup
Blue cheese --------------------- 1/3 Cup
White Wine Vinegar --------- 1/2 tsp
Ground Black Pepper ------- A Pinch
Method:
Break the blue cheese into small pieces and mix well with other Ingredients.
