Braised Minced Pork Rice -
Tender braised minced pork generously laden with cubes of mushrooms, it was packed with flavour and not greasy. Served with fragrant chicken rice and braised egg.
Hainanese Chicken Rice - Silky smooth, tender chicken paired with fragrant rice, it was mind blowing. I always enjoy chicken rice, hands down this has become one of my fave. Also worth mentioning, the amazing fiery chilli ginger sauce!
Fried Kunyit Chicken Rice - Aromatic and tasty, this healthy air fried chicken is crispy outside and moist on the inside. It was bursting with flavour and goes really well with the butterfly pea coconut rice. Served with a side of dried shrimp chilli and pickles which adds an extra kick and tanginess.
Black Sweet Vinegar Pork Trotter - Slow braised with sweet black vinegar, the trotters were soft and full of ginger aroma with a hint of sourish. Ohh… the thick gravy paired with white rice, just divine!
Equally praiseworthy, the tasty Nyonya Dumpling generously filled with fragrant dried shrimp chilli, as well as thick and heavenly sweet dessert soup, Bean Curd and Peach Gum.
Overall, comfort food at its best! I really enjoyed their homey dishes, worth every calories and truly value for money. Plus points, the food arrived well-sealed with separate compartments to prevent spillage and soggy. 💯

100g Pork Belly (sliced into strips)

4 Dried Mushrooms (rehydrated and sliced)
100g Chinese Cabbage (cut into small pieces)
600ml Chicken Stock (store bought)
600ml Water
20 pieces Clams
8 pieces Prawns
2 pieces Dried Chinese Noodles, approx. 240g
3 tbsp Hua Tiao Wine
2 tsp Sesame Oil
Salt and White Pepper to taste

1) 滑蛋蝦仁
材料:
A
蝦仁 500公克/ peeled shrimp 500g
油 1大匙/oil 1tbsp.
B
雞蛋 8顆/eggs 8pcs
鮮奶 100公克/milk 100g
太白粉 1大匙/ tapioca starch 1tbsp.
鹽 1/2茶匙/salt 1/2tsp.
蔥花 40公克/scallion 40g
作法:
1. 蝦仁洗淨,背部劃刀備用。
2. 雞蛋打入大碗中,再放入鮮奶、太白粉、鹽,混合拌勻。再加入蔥花拌勻。
3. 熱鍋開大火,倒入油加熱,再放入蝦仁,炒至蝦仁熟。
4. 再倒入蛋液,往中央撥動拌勻,翻炒至蛋半熟即可。
2) 滑蛋鮮蚵
材料:
鮮蚵 600公克/oyster 600g
米酒 1大匙/cooking rice wine 1tbsp.
鹽 1/2茶匙/salt 1/2tsp.
白胡椒粉 1/2茶匙/ white pepper powder 1/2tsp.
太白粉水 2大匙/thickener 2tbsp.
油 1大匙/oil 1tbsp.
B
雞蛋 8顆/eggs 8pcs 小標:
韭菜 100公克/ Chinese chive 100g
鹽 1/2茶匙/salt 1/2tsp.
作法:
1. 鮮蚵沖洗乾淨,去除碎殼備用。
2. 雞蛋加入鹽、韭菜攪拌均勻。
3. 熱鍋開大火,倒入油加熱,再放入鮮蚵,炒至鮮蚵略縮,再倒入鹽、米酒和太白粉水拌勻勾芡。
4. 倒入作法2的蛋液,往中央撥動拌勻,翻炒至蛋半熟即可。
3) 滑蛋豆腐
材料:
A
豆腐 2盒/tofu 2pcs
蒜末 20 公克/garlic 20g
鹽 1/2茶匙/salt 1/2tsp.
白胡椒粉 1/2茶匙/ white pepper powder 1/2tsp.
油 1大匙/oil 1tbsp.
B
雞蛋 8顆/eggs 8pcs
鹽 1/2茶匙/salt 1/2tsp.
太白粉水 2大匙/thickener 2tbsp.
蔥花 40公克/scallion 40g
作法:
1. 豆腐切丁;雞蛋加入鹽、太白粉水拌勻,再放入蔥花拌勻。
2. 熱鍋開大火,倒入油加熱,放入蒜末爆香,再放入豆腐丁、鹽、白胡椒粉燒煮一下。(豆腐燒一下更入味)
3. 倒入作法1的蛋液,往中央撥動拌勻,翻炒至蛋半熟即可。
4) 滑蛋鮮菇
材料:
A
鴻喜菇 100公克/bunashimeji 100g
美白菇 100公克/white bunashimeji 100g
蔥絲 30公克/scallion 30g
油 1大匙/oil 1tbsp.
B
雞蛋 8顆/eggs 8pcs
鹽 1/2茶匙/salt 1/2tsp.
白胡椒粉 1/2茶匙/ white pepper powder 1/2tsp.
米酒 1大匙/ cooking rice wine 1tbsp.
作法:
1. 鴻喜菇、美白菇切去根部,再剝散開。
2. 所有材料B混合均勻成蛋液。
3. 熱鍋開大火,倒入油加熱,放入菇,炒至菇金黃微焦且軟滑。
4. 倒入作法2的蛋液,往中央撥動拌勻,翻炒至蛋半熟即可。

材料
A
蝦仁 600公克 peeled shrimp 600g
番茄 100公克 tomato 100g
洋蔥 50公克 onion 50g
薑末 10公克 ginger 10g
番茄醬 60公克 ketchup 60g
米酒 1大匙 cooking rice wine 1tbsp.
糖 2茶匙 sugar 2tsp.
水 100ml water 100ml
B
蛋白 1大匙 egg white 1tbsp.
鹽 1/2茶匙 salt 1/2tsp.
太白粉 1大匙 tapioca starch 1tbsp.
沙拉油 1大匙 oil 1tbsp.
作法
1.番茄去蒂頭後切丁;洋蔥去皮切丁備用。
2.蝦仁在背上劃一刀開背。
3.將蝦仁加入材料B的鹽、蛋白與太白粉抓勻,再加入沙拉油拌勻。
4.熱鍋,倒入1大匙油,放入蝦仁炒至蝦仁完全變紅後取出。
5.另熱鍋,倒入1茶匙油,放入薑末、洋蔥丁炒香,再放入番茄丁炒勻。
6.加入番茄醬拌炒一下,加入米酒、水與糖煮至沸騰。
7.放入蝦仁翻炒均勻,略燒至湯汁濃稠即可。

枝豆おにぎり3種
■しば漬けしそにぎり
おにぎり3〜4個分
材料:
ごはん 200g
A枝豆 25g(さやから豆を取り出した状態で)
Aしば漬け 40g
A塩 2つまみ
A白ごま 大さじ1
しその葉 適宜
作り方:
1. しば漬けは細かく切り、ごはんにAを混ぜたら握りしその葉をつける
■天かすエビかまぼこにぎり
おにぎり3〜4個分
材料:
ごはん 200g
枝豆 25g(さやから豆を取り出した状態で)
天かす 大さじ1
干しあみエビ 大さじ1
ピンクのかまぼこ 25g
めんつゆ 大さじ1
作り方:
1. かまぼこを細かく切って、全ての材料をごはんに混ぜて握る
■そぼろしょうがにぎり
おにぎり3〜4個分
材料:
ごはん 200g
枝豆 25g(さやから豆を取り出した状態で)
鶏ひき肉 100g
焼肉のたれ 大さじ2
白ごま 大さじ1
しょうが 1かけ( 約12g)
万能ネギ 2本
作り方:
1. フライパンで鶏ひき肉を炒め火が通ったら焼肉たれで味を付ける
2. しょうがは細かいみじん切りに、万能ネギも小口切りする
3. 全ての材料をごはんに混ぜて握る

INGREDIENTS
200g steamed rice
25g edamame
40g shibazuke (Japanese pickles)
Some salt
1 tablespoon white sesame seeds
Some perilla leaves
PREPARATION
1. Chop shibazuke. Mix rice with chopped shibazuke, edamame, some salt, and white sesame seeds. Shape the rice into balls. Place some perilla leaves.
■Tenkasu, shrimp, and fish cakes
Servings: 3 to 4 rice balls
INGREDIENTS
200g steamed rice
25g edamame
1 tablespoon Tenkasu (Tempura flakes)
1 tablespoon dried shrimp
25g fish cake (pink color)
1 tablespoon noodle soup base
PREPARATION
1. Chop the fish cake into small pieces. Mix all ingredients with rice. Shape the rice into balls.
■Ginger chicken soboro
Servings: 3 to 4 rice balls
INGREDIENTS
200g steamed rice
25g edamame
100g ground chicken
2 tablespoons Japanese BBQ sauce
1 tablespoon white sesame seeds
1 piece (abt. 12g) ginger
2 strings scallion
PREPARATION
1. Cook ground chicken in a pan. When cooked, add some BBQ sauce.
2. Mince a ginger piece. Cho scallions.
3. Mix all ingredients with rice. Shape the rice into balls.
