「我來自美國加州聖地亞哥,畢業於美國創價大學,主修環境科學,當時主要從事淡水魚和基礎漁業的研究。隨後我到加州蒙特瑞國際研究學院攻讀碩士,研究海洋及沿海資源管理。當時其中一位教授就是來自台灣,她告訴我:『你應該去台灣看一看。』很多旅居海外的台灣人都會這樣鼓勵外國人拜訪台灣。
而我後來也的確到台灣進行了一個海峽兩岸的研究,作為唯一一位環境科學學人,我必須要想一個能在台北和上海演講的主題,垃圾就是一個最明顯的題材。因為當你來到台灣,你會發現台灣街道上都沒有垃圾,這點讓我感到非常新奇,為什麼會沒有垃圾呢?當時我也發現並沒有什麼關於台灣廢棄物管理轉型的英文資訊,所以我就決定住在台灣,研究這個讓我很著迷的題目。那是2013年的事,後來我獲得傅爾布萊特獎助金在墾丁海生館擔任訪問學者一年,至此之後我就待了下來。大約六個月前,我開始在銳思碳管理顧問公司上班,我們負責協助大型品牌和他們的供應鏈設定並達成碳供應鏈目標。這是我們剛在台灣成立的新辦公室,公司的總部在香港,但我們想要把重心移到台灣,因為台灣是關鍵的供應鏈環節。我們認為台灣將在永續報告和減碳目標上持續成長,而且台灣真的是個好地方。
台灣有很多我很喜歡的優點,我覺得最棒但很少被注意到的一點是台灣的生物多樣性。台灣是亞熱帶島嶼,擁有非常豐富多樣的原生種和特有種,美麗的蝴蝶、螢火蟲、珊瑚、鯨鯊、鮪魚、熊……物種多到我三天三夜都講不完。而且就算不開車,也很容易親近大自然。我也喜歡騎單車,台灣的單車道做的非常好,還有優質的單車品牌和產品。我在台灣大多時候過的很不錯,沒什麼好抱怨的,食物也好吃。而且台灣人基本上對科學有充分的信任和熱忱,許多民選官員都曾經是醫生、科學家、工程師等等,連總統都曾發表過博士論文。台灣的前副總統大概是地球上最有資格帶領對抗新冠疫情的領袖。感覺上,台灣有很多科學家,當個理工宅男好像也很OK。」

💕Why I chose Taiwan #14 – Environmental sciences scholar Nate Maynard discover Taiwan’s and its key role in supply chains
"I’m from San Diego California originally. My undergrad was from Soka University of America; liberal arts with a concentration in environmental studies, and I work on fresh-water fishes mostly and basic fisheries. And then my Master’s program was at the Monterey Institute of International Studies with a concentration in ocean and coastal resource management. One of my professors was Taiwanese, and she said: ‘you gotta go to Taiwan,’ as most Taiwanese people living abroad will tell foreigners.
And I did go visit Taiwan for a cross-Strait research trip, and as the only environment person, I had to come up with something I could talk about in Taipei and Shanghai, and garbage was the most obvious thing. Because when you come to Taiwan, there’s no garbage, and I became fascinated: Why is there no garbage? I realized there really wasn’t much information in English about Taiwan’s waste management transformation, and that’s sort of how I got hooked and decided I wanted to live in Taiwan. That was 2013. And then I got the Fulbright Fellowship and spent a year at the National Aquarium in Kenting....and they haven’t been able to get me to leave. About six months ago, I started working for a private consulting firm called Reset Carbon. We help major brands and their supply chains set and achieve carbon supply chain targets. This is a new office that we just set up in Taiwan. The company’s headquarter is in Hong Kong, but we wanted to pivot to Taiwan because Taiwan’s the key supply chain link. We expect to see Taiwan growing in terms of sustainability reporting, carbon reduction goals, and Taiwan’s just a nice place.
There’s a couple things that I really enjoy about Taiwan. I think the best thing that doesn’t get enough coverage is biodiversity. Taiwan is a sub-tropical island. It’s full of native and endemic species, beautiful butterflies, fireflies, coral, whale sharks, tuna, bears...I can list the animals for hours. It’s easy for me to go and get access to nature, even without a car. I also enjoy biking and Taiwan has excellent biking infrastructure, and great bike companies that make fine products. Most aspects of my life in Taiwan are pretty good. I can’t complain. Food is great too. I think there’s also a general trust and enthusiasm for science in Taiwan. I mean there’s a lot of elected officials that are doctors, scientists, engineers, and the president has published papers as a PhD. And you know, the vice president was probably the most qualified person on Earth to lead the COVID response. In Taiwan, it feels like the scientists are pretty well-represented, and like being a nerd is kinda okay." -- Nate Maynard

Make “Death Plants” Wither Away
“So then, brothers, we are debtors, not to the flesh, to live after the flesh. For if you live after the flesh, you must die; but if by the Spirit you put to death the deeds of the body, you will live.” (Romans 8:12-13 WEB)
The apostle Paul was addressing believers in the passage above—he said “brothers”.
We see that sowing to the flesh (indulging its lusts, cravings, and sinful passions) results in reaping earthly consequences of death, and this is not inflicted by God.
This is just the principle of sowing and reaping taking effect. This principle has been at work since God created the world.
“God said, “Let the earth yield grass, herbs yielding seeds, and fruit trees bearing fruit after their kind, with their seeds in it, on the earth”; and it was so. The earth yielded grass, herbs yielding seed after their kind, and trees bearing fruit, with their seeds in it, after their kind; and God saw that it was good…God said, “Behold, I have given you every herb yielding seed, which is on the surface of all the earth, and every tree, which bears fruit yielding seed. It will be your food.” (Genesis 1:11-12, 29 WEB)
We see from the Book of Proverbs that this principle of sowing and reaping is not limited to plant seeds, but also seeds like our spoken words:
“A man’s stomach is filled with the fruit of his mouth. With the harvest of his lips he is satisfied. Death and life are in the power of the tongue; those who love it will eat its fruit.” (Proverbs 18:20-21 WEB)
When we speak, we sow seeds of either life or death. These seeds can produce a harvest of fruits after its kind.
To understand sowing, look at the natural process of growing a plant seed.
A seed has to be planted in the soil (the human heart is like soil) and watered. It is a process that happens progressively over time, not instantly.
An exception to this is when God gives a miracle that compresses time. Otherwise, the process of sowing and reaping takes time to happen.
“Let no man say when he is tempted, “I am tempted by God,” for God can’t be tempted by evil, and he himself tempts no one. But each one is tempted when he is drawn away by his own lust, and enticed. Then the lust, when it has conceived, bears sin; and the sin, when it is full grown, produces death.” (James 1:13-15 WEB)
See how lust is depicted as a seed in the passage above. Firstly, it conceives when initially planted and watered in the heart, and begins to bear sin (the first occurrence of committing sin outwardly). The sin then keeps growing if constantly watered, and eventually when it is a full grown fruit, it produces death.
When sinful habits are constantly watered, the consequences become more severe. You can kill that plant when you stop watering it and instead spray some effective herbicide called “the Gospel of Jesus Christ”.
Such plants are also Satanic strongholds which can be destroyed by the “obedience of Christ”. Apply Jesus’ finished work to your situation and see how He has redeemed you from that habit through His sacrifice at the cross. He has made you the righteousness of God. You are now holy, just, blameless, and pure. Your reborn spirit does not manufacture sin and has no desire to.
You can also curse it to its roots and cause it to wither up, just as Jesus cursed the fig tree.
“Seeing a fig tree by the road, he came to it, and found nothing on it but leaves. He said to it, “Let there be no fruit from you forever!” Immediately the fig tree withered away. When the disciples saw it, they marveled, saying, “How did the fig tree immediately wither away?” Jesus answered them, “Most certainly I tell you, if you have faith, and don’t doubt, you will not only do what was done to the fig tree, but even if you told this mountain, ‘Be taken up and cast into the sea,’ it would be done. All things, whatever you ask in prayer, believing, you will receive.” (Matthew 21:19-22 WEB)
Instead of trying to break your sinful habit through willpower, secular counseling, or punishing yourself, use the power of your faith-filled spoken words.
Declare with me: “In Jesus’ name, I curse this death-bearing plant of _______ (the name of your sinful habit) to its roots. Let it wither away now and produce no more fruit forever. I have lost all desire to water this plant. I have been set free from the bondage, and I am the righteousness of God in Christ Jesus. Amen!”

Teochew cuisine, also known as Chiuchow cuisine, Chaozhou cuisine or Chaoshan cuisine, originated from the Chaoshan region in the eastern part of China's Guangdong Province, which includes the cities of Chaozhou, Shantou and Jieyang. Teochew cuisine bears more similarities to that of Fujian cuisine, particularly Southern Min cuisine, due to the similarity of Chaoshan's and Fujian's culture, language, and their geographic proximity to each other.[1] However, Teochew cuisine is also influenced by Cantonese cuisine in its style and technique.[1]
Teochew is a Chinese dialect group and Teochew people are Han Chinese from the historical Chaozhou prefecture (now the Chaoshan region) of eastern Guangdong province. In modern days, most Teochew people live in Guangdong province, and outside of mainland Chinese in Hong Kong, Malaysia, Thailand, Cambodia, Vietnam, Philippines, Indonesia and Singapore. Of course there are also Teochew in other parts of the world depending on where their ancestors migrate to in the olden days as they left their hometown in order to escape from a series of civil wars during the Jin dynasty (265–420).[info from wikipedia]

Ingredients:
Makes 13 rolls (39 small bite size pieces altogether)
1kg of prawns - deshelled & deveined (cut 1/3 of them into bigger chunks and the rest minced)
600g of minced pork (use streaky pork)
3 eggs
2 tablespoons of light soy sauce
2 tablespoons of oyster sauce
1 teaspoon of five spice powder
1 tablespoon of sole fish powder
A bunch of chopped Chinese coriander leaves (or Chinese parsley)
7 tablespoons of cornflour
8 pieces of water chestnut (diced)
2 big pieces of five spice beancurd skin
Some cooking oil (to be brushed on the tray and on the prawn rolls)
Some water (to stick the beancurd skin together when rolling)
Steam the prawn rolls for 15 mins. After you've steamed the prawn rolls, cool them down first then coat them with some cornflour before deep-frying them.

A famous seafood dish from Lebanon. Today's topic bears the question: Is a day off after a severe storm justified?
二人份量 For two people:
海蝦兩隻 - 2 large prawns
吞拿魚500克 - 500g of tuna steak
帶子兩隻 - 2 scallops
孜然粉少量 - pinch of ground cumin
鹽少量 - pinch of salt
生油少量 - drizzle of oil
芫荽兩條 - 2 stalks of coriander
青檸檬一個 - 1 lime
紅洋蔥一個 - 1 red onion
蒜四瓣 - 4 cloves of garlic
青椒,紅椒和黃椒各一 - Green, red and yellow bell peppers (one each)
番茄一個 - 1 tomato
青辣椒一條 - 1 green chili
蕃茄膏三湯匙 - 3tbsp of tomato pure
孜然粉三茶匙 - 3tsp of ground cumin
芫荽粉兩茶匙 - 2tsp of coriander powder
甜椒粉一茶匙 - 1tsp of paprika
1/3杯水 - 1/3 cup of water

A: 1 隻蛋白, 20g 糖 , 1 tablespoon 菜油( 今次用了煮餸用的橄欖油)
50g 高筋麵粉 (屋企無低筋,所以用高筋), 2 湯匙水
B: 3 隻蛋白
畫圖案用的麵糊比例:
牛油:糖霜:麵粉:蛋白=1 : 1 : 1 : 1

1 tablespoon vegetable oil
Part B: 3 egg white, 20g sugar

icing sugar : egg white : flour: butter =1:1:1:1
