謝謝The Green ROOM招待我們三人品嚐「雙人份」的聖誕跨年套餐～

耶誕節嚐慣了西式料理，換換亞洲風味的泰式蔬食也不賴，

尤其「The Green Room特製刈包」，
用兩種不同的豆腐加上軟嫩的杏鮑菇，滷出了比葷食刈包更有層次、清爽卻不失濃郁肥嫩的口感，佐以生菜、花生粉、辣椒，夾在細緻厚實的刈包體中，讓這個被戲稱「台式漢堡」的小吃，提升到另一個階層👍🏻

而「聖誕鈴鐺」佐用的酪梨醬，不同於美墨料理常見的guacamole ，調成泰式風味的鹹香，夾上生菜，又是另一番滋味

「泰式養生酸筍山藥」，則是以酸筍為湯底，燉出山藥的鬆醇

「田園時蔬湯米線」，非常溫柔淡雅的口感

「雪花銀耳湯」，鹹鹹的椰奶燉上爽脆銀耳，很特別的做法

「聖誕節限定哈蜜瓜蛋糕」（無奶蛋），本來以為最上層的綠樹是buttercream ，沒想到竟然是外層濃郁的抹茶內藏巧克力旦糕體，接著一層又一層地分別疊上藍莓、鮮奶油、石榴籽、巧克力旦糕、哈密瓜⋯等，十分對味❤️

有時候，我也不知道自己是怎麼辦到的，
可能是種直覺吧！
實在是太愛吃蛋糕上的鮮奶油，
竟然讓我用 #Aquafaba 和純植物油，打出天然的植物奶油霜，第一次就上手😱
不像ㄧ般氫化植物鮮奶油含有反式脂肪喔！
這奶油霜冷藏過後竟然吃起來有點像白巧克力？！

新手裝飾旦糕，還是醜醜的....
這得好好練練....

*材料
3/4杯 AF
白砂糖1/2杯
香草精1茶匙
自製純植物奶油（130克）
初榨椰子油1杯（120克）

《作法》

* 添加白砂糖到熱的AF，攪拌至完全溶解，然後冷卻
* 用電動攪拌器高速打發 AF直到硬性打發
* 加入植物奶油和椰子油拌勻
* 最後加入香草精

Flour 2 cups (250g)
Baking powder 1 tsp
Baking soda 1 tsp
Salt 1/2 tsp
Cinnamon 2 tsp
Nutmeg 1 tsp
Brown sugar 1 and 1/2 cups (300g)
Grated carrot 2 and 1/3 cups (255g - roughly 2 carrots)
Coconut oil 1/2 cup (120ml)
Vanilla extract 1tsp
Apple cider vinegar 1 tbsp
Chopped walnuts 1 cup (100g)
Soymilk or yoghurt 6 tbsp
Frosting is soy whip, powdered sugar, vanilla, lemon juice & zest all to your liking
