年前跟大家分享過沒有包餡的湯圓,這次元宵節快到了,再來分享一道自己喜歡的芝麻湯圓。
不管是有包料或是沒有包料的湯圓,塔塔都很喜歡搭配紅豆湯,除了增加膳食纖維外,紅豆的鐵質很高,非常適合女性補鐵喔!
芝麻湯圓的內餡也可以換成花生粉喔!就是花生餡的湯圓了~
塔塔自己蠻喜歡吃抹茶風味的糯米糰,將原味的糯米糰加一點抹茶粉就可以變成綠色的湯圓囉!

Ingredients:
For the filling:
200g (2 cups) peeled split mung bean
1 cup water
1/2- 1 tsp salt
1 tbsp sugar
3 tbsp crispy fried shallots
3 tbsp vegetable oil
For the dough:
400g (14 oz) glutinous/ sticky / sweet rice flour (mochiko/ bot nep)
360ml (1.5 cup) luke warm water (37-40°C)
For ginger syrup
1.5 liter (6 cups) water
300g (1+ 2/3 cups) brown/palm sugar
1/4 tsp salt
1 large piece ginger (double size of your thumb)
