✍🏼️Just found my new favourite item from Sushi California! The soy salmon sashimi was well marinated! It was flavourful and buttery, while the egg yolk added extra richness to it! I highly recommend pairing your salmon with a bite of rice and a hint of wasabi as it balances out the richness with some refreshness!

Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!
You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

家で簡単に作れるサーモンの燻製マリネのレシピをご紹介します!
鍋にチップを入れて煙が出たら、すぐにグラスをかぶせて煙をためることが大切なポイントです。
今回はサーモンを使って中華風にマリネしましたが、お好きなお刺身でも美味しくできますよ♪
かなり煙が出るので、必ず換気をして調理してくださいね。
とっても美味しいのでぜひ、作ってみてください!
サーモンの燻製中華マリネ
2人分
材料:
サーモン(刺身)100g
紫玉ねぎ(みじん切り)大さじ1
大葉 4枚
Aおろしにんにく 少々
Aごま油 大さじ1
Aしょうゆ 小さじ1/2
Aレモン汁 小さじ1/4
A砂糖 1つまみ
A塩 1つまみ
糸唐辛子(お好みで)適量
燻製チップ(リンゴなど)大さじ1
作り方:
1.ボウルにA、紫玉ねぎ入れて混ぜ、サーモンを加えて和えたら、お皿に大葉を敷き、サーモンをこんもりと盛る。
2.ステンレスの鍋にアルミホイルをしき、燻製チップをのせ、蓋をして強火で3分加熱する。蓋を開け、燻製チップにワイングラスをかざし、1分くらい煙をグラスの中にためる。
3.1にグラスをかぶせ、2分瞬間燻製する。グラスをはずして糸唐辛子をのせて完成!

Asian Marinated Salmon with Applewood Smoke
Servings: 2
INGREDIENTS
100g salmon sashimi
1 tablespoon chopped red onions
4 perilla leaves (aka shiso)
A
Some grated garlic
1 tablespoon sesame oil
1/2 teaspoon soy sauce
1/4 lemon juice
A pinch of sugar
A pinch of salt
Some chili threads
1 tablespoon (apple wood) smoking chips
PREPARATION
1. Mix all A ingredients and chopped red onions in a bowl. Add salmon and combine. Place shiso leaves on a plate and put salmon on them.
2. Place a foil on the bottom of a stainless pot. Place smoking chips on the foil. Heat the pot over high heat for about 3 minutes with a lid on. Open the lid. Using a wine glass, keep the smoke in it.
3. Put the wine glass upside down on the plate (1). Let it sit for 2 minutes to smoke the salmon. Remove the wine glass. Top with chili threads.
4. Enjoy!

Japanese love the eggs and livers
I think part of it has to do with because it’s an island nation, it’s easy to catch fresh fish
Salmon are born in the river then they swim down to the ocean, grow big, and return to the river they were born in again.
The peaks of catches are in September and October when they return to lay eggs. People call salmon caught during this time “Akijake” (fall salmon).
Wild salmons have parasites so it is better not to eat them as sashimi.

島国なので新鮮な魚が取れやすかったのも影響してると思います
川で生まれた鮭は、海へと下り、大きく成長して、再び生まれた川へと帰ってきます
産卵の為に戻ってるくる9月10月が水揚げのピークで、この時期に取れる鮭を「秋鮭」と言います
天然の鮭は寄生虫がいるので刺身では食べない方がいいです
