The River Prawns is what everyone comes for at @baanrabiangnam_rivertreehouse
And they're such pros at it, the prawns come out succulent and a little smokey every single time. So I'm told and now believe. Digging out the bright sunkiss-coloured congealed head juice is all but mandatory, so save that for last. The real deal here though, apart from the picturesque view and signature prawns, there's so much more to this homely riverside experience than one might expect.
Just days prior to the dine - in lockdown, serendipity was on side as we took a rare opportunity to head, just beyond the urban sprawl limit to Nonthanburi. @baanrabiangnam_rivertreehouse
Was the obvious choice, nestled by the Chaophraya River, the multi-storey eatery is built almost entirely of wood, including the chair (bring a seat cushion if you wish to settle-in) and terraces, which makes for the perfect spot for boat and fish watching. During this period there were little diners so we were half expecting that the menu would by downsized and less than fresh as usual, turns out we were only half right. Although some of first choices were unavailable, I believe I've never had a fresher soft shell crab in my life. The batter so delicately crisp as to compliment the tenderness of the crab shell and flesh and that raw Mango dipping sauce! Bloody hell, that's a meal in itself. This dish in some ways almost outshone their signature grilled River Prawn.... (next post)

In my coaching work, I’ve had many clients who said they can’t do what they want because that’ll upset their parents.
They tell nightmare scenarios of how their parents, husbands, friends - basically how everyone - will be upset if they do what they want.
While there might be some truth to this story, in most cases, the nightmare is blown out of proportion.
Once the clients embrace their fear and tell their parents the truth, they’re often surprised by their parents’ ability to understand.
I think this is the key: liberation. 🙌
Liberation doesn’t always feel like happiness, not even peace.
Liberation sometimes feels like burning, like destruction, like darkness, like pain.
How the phoenix liberates itself from its old shell, to be reborn again.
When we’re in the burn of liberation, we need to remind ourselves that the only way out is through. We endure. All of us. We bear the unbearable.
And one day - later than we hope for, but sooner than we expect - we’ll emerge from the darkness, like a baby from her mother’s womb: tired, and messy, and crying, and utterly - utterly glorious. ✨

1kg Crab leg meat (inclusive of shell)

Seasonings:
3 tbsp Light soy sauce
1 tbsp Dark soy sauce
3 tbsp XO sauce
3 tbsp Shaoxing wine
2 tbsp Sesame oil
White Pepper to taste

In the Hague, the district court delivered a judgment against Royal Dutch Shell, the parent company of the Shell group, which is one of the oil giants in the world. Under the ruling, Shell is obliged to cut its carbon emissions by 45% by the end of 2030, compared to 2019.
While this is surely a historic victory, it may not bring as great benefits as we expect it to do for the following reasons.
Firstly, energy demand is still rising. Oil and gas demand is far from peaking and supplies will be needed. Countries in Asia provide the lion’s share of growth. With the demand still rising, can we really reduce carbon emission with this ruling against Shell?
Some may suggest renewable energy as the alternative. Of course this is a great solution. However, we’re not yet ready to change from fossil fuels to renewable energy. The renewable energy sector is definitely booming, but not ready to meet energy demand from around the globe.
This explains why climate activists have got some unlikely cheerleaders in the oil capitals of Saudi Arabia, Abu Dhabi and Russia. Why? Asian countries, with their rising demands, will now go to oil companies in the Middle East and Russia. Shell’s loss means more business for them.
