What an incredible initiative! #Foodforfighters organisation, supported by UNPD put together among 7 of Bangkok`s most notable Chefs to cook over 700 meals in one morning to offer those affected by COVID - 19, their favourite comfort meals!

Although today was dedicated to the help of such talented chefs, #Foodforfighters are serving up multiple thousands of meals EVERYDAY! The meals are distributed to field hospitals, slum communities, jails and other communities suffering adverse health and extreme hardship under the pandemic.

The organisation work alongside farmers, volunteers and sponsors who can donate and contribute whatever resources they have to help. This morning was filled with an infectious air of good will and determination. The Chefs put in their valuable time and culinary skills to donate, not any casual streetside meal but one with a touch of their signature gourmet. These dishes will not only fill bellies but also so many hearts ❤️.

ร้านดินเนอร์​ย่านเกษตร​นวมิ​น​ทร์​นี้ดีจนต้องบอกต่อ

This place shines like a gem sitting in Kaset Nawamin area folks! Falls in Love Coffee-Bar & Restaurant is a family owned restaurant, serving good food like you would serve to family members. With a massive menu ranging from impressive single-portion Thai-Chinese comfort food to good quality Charolais steaks, splendid drink selections, and a remarkable ambience with a waterfall with greeneries that could make you forget you’re in Bangkok, this is a perfect place to dine and have a good time with the family, friends, or an easy date night. I was impressed by the dishes here, never tried a char-grilled oyster blade steak this tender before. Thai foods were also really nice and hearty (and huge in portion), we especially love the fried rice noodles with gravy; so succulent and contains nice smoky flavors. The place also has big karaoke rooms, and facilities to hold a party for up to 300 pax. Parking is rich in quantity. A strong recommendation from me for those who’s looking for a place to hang out in Kaset Nawamin.

ทุกคนน เราไปเจอร้านงานดีที่แถวย่านเกษตร-นวมินทร์มา "falls in love coffee-bar and restaurant" นี่เป็นร้านของครอบครัวที่รักการทำอาหาร และอยากจะทำของอร่อยๆให้ลูกค้าแบบใส่ใจเหมือนกับที่ทำให้ที่บ้านทาน เมนูที่ร้านมีให้เลือกเยอะมาก ไม่ว่าจะเป็นอาหารจานเดียวสไตล์ไทย-จีน เครื่องล้นๆ ไปจนถึงสเต็ก Charolais คุณภาพดี เครื่องดื่มมีให้เลือกหลากหลาย และบรรยากาศธรรมชาติสุด​ๆ​ ไม่เคยทานสเต็กใบพายย่างเตาถ่านที่นุ่มขนาดนี้มาก่อน อาหารไทยก็ดีงาม (และจานใหญ่มว๊าก) เราชอบราดหน้าของที่นี่มากๆ เส้นหนึบ เนื้อนุ่ม หอมกลิ่นคั่วเส้น ที่ร้านมีโซนคาราโอเกะส่วนตัวไว้บริการ และมีพื้นที่กว้างขวางมากๆ รองรับแขกได้ถึง 300 คนเลย ที่จอดรถก็มีเยอะ สะดวกสุดๆ ถือว่าชอบมาก ใครหาร้านอาหารโซนเกษตร-นวมินทร์อยู่ เราก็อยากจะแนะนำให้มาลองทานกัน

กรณีศึกษา The Cassette บาร์ย้อนยุค ที่ทุกคนหลงรัก

The Cassette Music Bar
เป็นร้านอาหารกึ่งผับที่มีคอนเซปต์ชัดเจนสมชื่อ ที่ประสบความสำเร็จอย่างมาก

หนึ่งในผู้ก่อตั้งร้าน The Cassette Music Bar ก็คือ คุณพิณภัสร์ สิริอัครเศรษฐ หรือ คุณภา
และก็เป็นเธอคนนี้ ที่เป็นคนคิดคอนเซปต์ให้กับร้าน

เริ่มตั้งแต่หน้าร้านที่ตกแต่งด้วยตลับเทป กับไฟนีออนชื่อร้าน ประกอบกับกำแพงสีชมพูขนาดใหญ่
ทำให้เป็นมุมยอดฮิต ที่ใครมาร้าน ก็ต้องมีรูปคู่กับมุมนี้ และกลายเป็นภาพจำของร้านไปในตัว

สำหรับเพลย์ลิสต์ หรือลำดับการเปิดเพลงของร้าน คุณภาก็ไม่ได้ปล่อยผ่าน
โดยจะต้องเป็นเพลงในยุคเทปคาสเซตต์เท่านั้น
และห้ามเล่นเพลงเศร้าหรือเพลงอกหักแบบจมดิ่ง
เพราะถ้าเยอะไป ลูกค้าจะเรียกเก็บเงิน และหนีกลับบ้านกันหมด

ดังนั้นเพลงที่ร้าน แม้จะเป็นเพลงอกหักบ้าง
แต่ก็ต้องเป็นเพลงอกหักแบบยังมีความหวังกับชีวิต ให้ลูกค้า ยังสนุกไปกับเพลงได้

และเมื่อทุกอย่างประกอบร่างเข้าด้วยกัน ผลลัพธ์ที่ได้ก็ค่อนข้างเป็นที่น่าพอใจ

หลังจากเปิดได้ไม่ถึงเดือน ลูกค้าก็จองโต๊ะเต็มจนบางครั้งถึงกับล้นออกมานอกร้าน
หรือบางครั้งก็ไม่สามารถวอล์กอินได้ และต้องจองกันข้ามวันข้ามคืนเลยทีเดียว

ที่สำคัญคือ เนื่องจากที่ร้านเลือกเพลงในยุค 90’s
จึงดึงดูดลูกค้ากลุ่มวัยทำงาน ที่อยากรำลึกวันวานด้วยเพลงที่พวกเขาคุ้นเคย
และคนกลุ่มนี้ ก็เรียกได้ว่าเป็นกลุ่มลูกค้าที่มี “กำลังซื้อ”

อีกมุมที่น่าสนใจ คือ ด้วยคอนเซปต์และการตกแต่งร้านให้ดูหวานๆ
จนอาจดูเหมือนร้านจะจับกลุ่มลูกค้าผู้หญิงเป็นหลัก

แต่สิ่งที่เกิดขึ้นคือ เมื่อมีลูกค้าผู้หญิงเต็มร้าน
ไม่นานก็จะช่วยดึงดูดให้ลูกค้าผู้ชายตามมาได้เช่นกัน

อ่านมาถึงตรงนี้ เราก็น่าจะเริ่มเห็นสาเหตุที่ทำให้
The Cassette Music Bar มักจะมีลูกค้าเต็มร้านเสมอ
แล้วสงสัยหรือไม่คะว่า ลูกค้าเยอะขนาดนี้ ยอดขายของร้านจะขนาดไหน?

ผลประกอบการ บริษัท เดอะ คาสเส็ต จำกัด (พูดรวบแค่ปีล่าสุด)

ปี 2560 รายได้ 42.4 ล้านบาท กำไร 5.3 ล้านบาท
ปี 2561 รายได้ 100.8 ล้านบาท กำไร 9.9 ล้านบาท
ปี 2562 รายได้ 109.5 ล้านบาท กำไร 11.6 ล้านบาท

จากข้อมูลด้านบน เห็นได้ว่าผลการดำเนินการของร้านเติบโตขึ้นทุกปี
แต่สำหรับปีนี้ อาจจะเป็นปีที่ท้าทายสำหรับ The Cassette พอสมควร
เพราะการระบาดของ COVID-19 ทำให้ร้านต้องปิดให้บริการและสูญเสียรายได้

ทางร้านจึงเกิดความคิดที่จะ “ไลฟ์ดนตรีสด” ผ่านเฟซบุ๊กเพจ
ด้วยเพลงตามแบบฉบับของทางร้าน

กลายเป็นว่าผลตอบรับเกินคาด ยอดวิวต่อคลิป สูงถึงหลักแสน
จุดนี้ทำให้ลูกค้าที่ดู รู้สึกคิดถึงบรรยากาศเก่าๆ และยังอยากจะกลับมาอีกครั้ง

เมื่อสถานการณ์ดีขึ้น และรัฐบาลประกาศให้เรากลับมาเปิดได้อีกครั้ง
ผลปรากฎว่า ลูกค้าต่างพากันมาใช้บริการจนเนืองแน่น

แต่ทว่า แม้ร้านจะบริหารและดึงดูดลูกค้าจนเต็มร้านได้ทุกวัน
แต่สุดท้ายรายได้ก็น่าจะเติบโตไปไม่ได้มากกว่านี้ เนื่องจากข้อจำกัดเรื่องพื้นที่
และด้วยที่ตั้งของร้านสาขาเอกมัย ในปัจจุบัน ก็อาจจะขยับขยายลำบาก

ดังนั้น ทางร้านจึงได้ใช้กลยุทธ์ ในการจัดเป็นร้าน Pop-up หรือการจัดในลักษณะงานอีเวนต์

ด้วยคอนเซปต์ร้านที่ชัดเจน ทำให้ไม่ว่าจะไปตั้งที่ไหน คนก็จำได้ว่าเป็นร้าน The Cassette
และที่สำคัญ อาจกลายเป็นจุดที่ดึงดูดลูกค้าได้มากขึ้น

เพราะลูกค้ามั่นใจได้ว่าจะได้รับความสนุกเหมือนกับไปร้านที่เอกมัย
แต่ในบรรยากาศที่เปลี่ยนไป ไม่ซ้ำเดิม

อย่างในช่วงปลายปีที่ผ่านมา The Cassette Music Bar
ได้ไปร่วมเปิดเป็นร้านอาหาร ที่โครงการ คณาพญา Riverfront
โซนพระราม 3 ริมแม่น้ำเจ้าพระยา

ซึ่งก็มีการตกแต่งร้านให้มีบรรยากาศ คล้ายอยู่บนเกาะหรือริมชายหาด
แต่ก็ยังคุมโทนให้สีร้านเป็นสีชมพูเหมือนเดิม

หรือเมื่อไม่นานมานี้ The Cassette Music Bar
ก็ย้ายขึ้นไปจัดบนชั้นดาดฟ้า ของโรงแรม SO/ Bangkok
ซึ่งโต๊ะถูกจองเต็มตั้งแต่วันแรกที่เปิด

โดยการออกร้านเหล่านี้ จะไม่ใช่การตั้งร้านแบบถาวร
แต่จะเป็นเหมือนลักษณะอีเวนต์ 3 เดือน 5 เดือน แล้วแต่กรณี

ซึ่งข้อดีของการใช้กลยุทธ์แบบ Pop-up ก็คือ
The Cassette ไม่ต้องใช้เงินทุนสูงเหมือนเปิดร้านใหม่

เพียงแค่ Copy ทุกอย่างจากร้านเดิม แล้วไป Paste ลงที่ใหม่

เสียแค่ค่าตกแต่งเพิ่มเติม ตามธีมของสถานที่นั้นๆ
ถ้าไม่เวิร์ก ก็ยังเจ็บไม่หนักมาก
เพราะร้านไม่ได้ตั้งอยู่ถาวร และก็ถือเป็นการลองไปในตัว

จากเรื่องของ The Cassette ทำให้เราเห็นว่า การทำธุรกิจ ไม่ใช่แค่คิดภาพใหญ่ของธุรกิจ แต่รายละเอียดเล็กๆน้อยๆ ก็สามารถกลายเป็นจุดสำคัญที่ทำให้ลูกค้าประทับใจ จนอยากจะแวะเวียนกลับมาที่นี้ซ้ำๆ เหมือนอย่างที่ผู้คนมากมาย หลงรักThe Cassette

So, my sisters and I just had our quick vacation in Bangkok! We booked last minute ticket 1 month prior the travelling date and decided to go Bangkok for food hunting & shopping purpose only for 3 days! We didn't go to any touristy / sightseeing places as we just want to relax and enjoy the trip walking around the city cafe hopping things like that.
