GIVE OTHERS A WAY OUT
那天,我坐了六個小時為客人們批八字,間中只去了一次洗手間。
我往往都要求客人自己也點些東西。偶爾有些客人說要一杯白開水就好。我會提醒他們,禮儀上我們應該點些什麼,無論價錢多便宜,畢竟我們佔用人家的地方數小時。
有時看到客人彷彿不捨得花錢,我便提出請他們喝個飲料。但至今,沒有一位客人接受我請客。我想他們都明白我的用心良苦。
因為容易胃痛,所以我不喝咖啡、茶和果汁,一般我會點些小吃。
那天很明顯到處都比較少人。我見了三位客人,每當一位客人落座的時候,我就會點一樣食物。
有位客人覺得有點奇怪,問我是否是不停地見客人而肚子餓了。他想給我些時間來吃個正餐。
我笑笑解釋:
這是我回饋的方式。我用人家的地方,辦公六小時。地方裝修得那麼用心,服務生那麼周到(只是笑容少了些),如果我只點一個幾塊錢的蛋糕來「付租金」,然後又受服務生不停地為我添水,那我就是在佔人家的便宜。
等同於 - 偷。
我自己也曾做過幾次生意。我明白開銷不斷地增加,老闆要承受多少的壓力。幫助人家的生意,說不定也能避免他人被栽。
在這種艱難的時刻,給人一個生計等同於救人,甚至多人,一命呀。😄
批三個八字,我淨賺超過一千新幣。只花幾塊錢,那未免太吝嗇了。
幫助自己國家的經濟,回饋給社會,有很多的方法。這是我個人用的方法之一。

That day, I sat down for 6 hours of Bazi consultations. Only excusing myself to go the restroom once.
I would request my clients to order something for themselves. Occasionally there would be clients who said they would just get plain water. I would remind them that it is better to order something, no matter how small, since we are using the premises for a couple of hours.
Sometimes if the client seems reluctant to spend, I would offer to pay for him/her. But till now, no one took up my offer of a treat. My clients understand my well-meaning intentions.
I do not take coffee, tea or juices due to my proneness to gastric. So I usually order small bites.
It was obviously quieter around. I met three clients and with the arrival of each client, I ordered something from the menu.
A client seemed puzzled at my ordering, and asked if I was hungry seeing several clients back-to-back. He wanted to give me time to eat a proper main course.
I explained:
It is my way of giving back. I am seated for so many hours. It is not right to just order one cake that pay for my 6 hours of “rental” and receive endless refills of plain water.
That would be taking advantage of such a nicely-renovated environment and the staff’s prompt service (just not smiley enough).
Equivalent to stealing.
Moreover, I have ran businesses before. I know how stressful it is for the boss with the never-ending overheads.
Who knows, maybe helping someone’s business out can help preserve another person’s rice bowl and the livelihood of a family.
In challenging times like this, giving people the opportunities to continue their work is almost like saving the lives of people. 😄
3 Bazi consultations get me over S$1K. Wouldn’t it be stingy of me to just spend a few dollars?
There are many ways of giving back and helping to stimulate our economy.

I made a large fresh Daifuku filled with frozen "Petit Daifuku" (1kg!) from the Gyomu Supermarket.I used matcha green tea flavored fresh cream, so I never get tired of eating it. This is not a birthday cake, but a birthday Daifuku for someone who loves Japanese sweets! I want to give a big fortune ( Meaning of Daifuku ) and impact.
*Recipe* (for one 17cm diameter bowl)
1.Mix 6g of matcha, 40g of sugar and 40ml of fresh cream in a bowl over hot water.Matcha is less likely to get lumpy once it is sifted.
2.Pour 360ml of fresh cream into a bowl and add the cooled (1).
3.Cool the bottom of the bowl with ice water and whisk until stiff.
4.Spread out the plastic wrap in a 17cm diameter bowl.
5.Layer (3) with the petite daifuku. I used 25 pieces of petite daifuku.
6.Place in the freezer to cool and harden.
7.In a heatproof bowl, mix together 150g of joshinko (rice flour) and 60g of sugar.
8.While mixing, add 165g of lukewarm water, a little at a time, keeping an eye on it. I added a little less than 150g this time.
9.Wrap it softly and heat it in a 600w microwave for 2 minutes and 30 seconds.If any whitish areas remain, mix them briefly and heat while watching the situation.This time, it was additionally heated twice for 30 seconds and 20 seconds.
10.Pound the mixture with a wet pestle until it becomes smooth.
11.When it is cool enough to touch, knead it with wet hands about 50 times.
12.Put the mochi between two sheets of plastic wrap and stretch it out. It was quite difficult.
13.Take (6) out of the bowl and wrap it with (12).
14.It's done. For a while, this Daifuku will be my daily snack.
You can freeze the whole thing, so if you can't eat it all, freeze it and enjoy it.
業務スーパーの冷凍『プチ大福』(なんと1㎏入り)を中にいっぱい詰めた大きな生大福を作りました。生クリームを抹茶味にしたので食べ飽きない味になりました。和菓子好きなあの人の誕生日ケーキならぬ誕生日大福!大きな福とインパクトをプレゼントしたい。
*レシピ*(直径 17㎝のボウル 1個分)
1.抹茶 6g、砂糖 40g、生クリーム 40mlを湯煎しながら混ぜる。抹茶は一度ふるうとダマになりにくいです。
2.ボウルに生クリーム 360mlを入れ、冷ました(1)を入れる。
3.ボウルの底を氷水で冷やしながらかために泡立てる。
4.直径 17㎝のボウルにラップを敷き込む。
5.(3)とプチ大福が層になるように重ねる。プチ大福は25個使いました。
6.冷凍庫で冷やし固める。
7.耐熱ボウルに上新粉 150g、砂糖 60gを入れ混ぜる。
8.混ぜながら、ぬるま湯 165gを少しづつ様子を見ながら加える。今回150g弱加えました。
9.ふんわりラップをして、600wの電子レンジで2分30秒加熱。白っぽいところが残っていたらザッと混ぜ、様子を見ながら加熱をする。今回、30秒・20秒と2回追加加熱しました。
10.水で濡らしたすりこぎなどの棒で滑らかになるまでつく。
11.触れるくらいまで冷めたら、水で濡らした手で50回ほどこねる。
12.ラップに挟んで餅を伸ばす。結構大変でした。
13.ボウルから取り出した(6)を(12)で包む。
14.でけた。しばらく3時のおやつは、この大福ですわ。
まるまる冷凍できるので、食べきれない分は冷凍して楽しんでください。

Japanese Doll Festival (Hinamatsuri), or Girls' Day, is held on March 3rd. On this day, we set up hina dolls (hina-ningyo) since they are believed to protect girls from bad luck.
This year (2015) was my daughter's 1st Hinamatsuri! The very first celebration is important, when family members hope for growth and happiness for baby girls. My daughter still can't eat anything but I hope she liked this Sushi cake :)
Hishi Mochi (diamond shaped rice cake) is usually presented with hina dolls. Hishi Mochi commonly consists of three layers: pink, white, and green, from top to bottom. It is said that pink represents peach flowers, white represents snow, and green represents grass. Those colors have a meaning to get the power of nature. Therefore, I used these three colors for my Sushi Cake :)

Sushi Cake for Hinamatsuri
Difficulty: Medium
Time: 20min
Number of servings: 4 people = 15cm (6inch) round cake pan
Ingredients:

smoked salmon
cucumber
2 quail eggs
Nori seaweed sheet
Ikura (salmon roe)
Sakura Denbu (pink colored seasoned shredded codfish)
Directions:
1. Wet the cake pan (or line with plastic wrap). Place the crab meat Sushi rice and press down flat with a rice paddle or a spoon. Then place the white Sushi rice and the Aonori Sushi rice one after another and flatten as well. Turn the cake pan upside down onto a plate to remove the rice.
2. Make a thin ribbon of cucumber for Odairisama (prince)'s Kimono and slice the leftover into thin rounds.
3. Cut out the egg crepe and make a scepter and a fan. Thinly slice the leftover.
4. Place the cucumber slices and shredded egg crepe on the Sushi cake. Wrap the quail eggs with a cucumber ribbon (prince) and smoked salmon (princess). Let them hold the scepter (prince) and the fan (princess). Cut out Nori sheet to make their faces. Attach their hairs with bento picks. Garnish with Ikura and Sakura Denbu to finish.
* お雛様 (ohinasama: princess) holds a fan called 扇子 (sensu) in both hands.
* お内裏様 (odairisama: prince) holds a flat wooden scepter called 笏 (shaku) symbolic of his rank in his right hand.

Sushi Cake
Difficulty: Easy
Time: 20min
Number of servings: 4 people = 18×8cm (7x3inch) loaf pan
Ingredients:
600g (1.3lb.) cooked Japanese rice (short-grain rice)
4 tbsp. Sushi vinegar*
50g (1.8oz.) crab meat
1 tbsp. Aonori (green laver)
Kinshi Tamago (shredded egg crepe)
- 1 egg
- 1 tsp. sugar
- a pinch of salt
smoked salmon
cucumber
cooked shrimp
Ikura (salmon roe)
Directions:
1. To make Kinshi Tamago (shredded egg crepe), mix egg, sugar, and a pinch of salt very well. Heat cooking oil in a large frying pan on low heat, pour the egg mixture in the pan and spread over the surface. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds. Leave it to cool completely. Cut into thin and short strips.
2. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using a rice paddle to separate the grains. Divide it into 3 bowls. Mix Aonori (green laver) in one bowl and mix crab meat in another.
3. Wet the loaf pan (or line with plastic wrap). Place the crab meat Sushi rice and press down flat with a rice paddle or a spoon. Then place the white Sushi rice and the Aonori Sushi rice one after another and flatten as well. Turn the loaf pan upside down onto a plate to remove the rice.
4. Top with Kinshi Tamago, roll up smoked salmon strips to make roses, slice cucumber to make leaves, and garnish with shrimp and Ikura.
* Ingredients to make sushi vinegar from scratch.
