《世界建築節入圍名單》

世界建築節（World Architecture Festival，簡稱WAF）為國際建築界除了普立茲克建築獎之外，規模最大、聲望最高的盛事之一。

每年在不同的城市舉辦，將世界各地的建築師、設計師集聚一堂。今年第13個年，將在葡萄牙里斯本舉辦。

本屆WAF/INSIDE共收到來自78個國家的1399件報名作品，其中560件作品入圍。

完工項目與景觀項目單元297件作品入圍，我們挑選了幾個作品。以下依序：

มากิน Fine-Dining ราคาเกือบหมื่น แถมได้เป็นร้านอาหารอันดับ 4 ของโลก..แต่ต้องเลียจาน!!??

เชื่อว่าถ้าพูดถึงร้าน Gaggan หลายๆคนต้องรู้จัก เคยได้ยิน หรือหลายคนอาจจะเคยไปกินมาแล้ว ซึ่งออนก็เป็นหนึ่งคนในนั้นที่พึ่งไปกินมาเมื่อ 2 เดือนก่อน ด้วยความโชคดีเพราะพี่แพรคนสวย เจ้าของเพจ VOKE up like this? ชวนไปกินวันเกิดนั่นเอง

ร้าน Gaggan เป็นร้านอาหารที่ได้ Michelin Stars 2 ดาว 🌟🌟
ครองตำแหน่งอันดับ 1 ของ Asia's 50 Best Restaurants ถึงสี่ปีซ้อน และในปี 2019 ที่ผ่านมา ยังได้เป็นร้านอันดับที่ 4 ของโลกจาก World's Best Restaurant อีกด้วย

ภายในร้านจะแบ่งเป็น 2 ชั้น โดยชั้นแรกจะเป็น G's Spot โซนยอดฮิตที่เราสามารถเห็นเชฟและปรุงอาหาร เตรียมอาหารกันอย่างสดๆ และโซนชั้น 2 จะเป็นโซน Arena G ที่จะเป็นโต๊ะให้นั่งสบายๆ เพิ่มความเป็นส่วนตัว แน่นอนค่ะว่า..ออนกับพี่แพรเลือกนั่งตรง G's Spot!

✨ อยากนั่ง G's Spot ต้องทำยังไง?

การจองต่างๆ จะต้องเข้าไปทางเว็ปไซต์ของเค้าและทำการจอง
โดยถ้าจองโซน Arena G เราก็กรอกข้อมูลต่างๆ และรอทางร้านคอนเฟิร์มกลับมาทางอีเมล์ แต่ถ้าต้องการจองโซน G's Spot ที่มีความฮ็อตมากกกก เราก็จะต้องกรอก Questionnaire คร่าวๆ ส่งไป และรอทางร้านตอบรับมานั่นเอง

✨ เชฟ Gaggan บอกว่าก่อน Covid-19 โซน G's Spot แน่นมากกกก
เพราะจะอนุญาตให้นั่งสัญชาติละคู่เท่านั้น เช่นคนไทยคู่นึง คนจีนคู่นึง คนอเมริกันคู่นึง ทำให้การจองต่างๆยากมากกกกก แต่หลังจาก Covid-19 โซนตรงนี้เลยจองง่ายหน่อย เพราะมีแต่คนไทยด้วยกันแบบเราๆนั่นเอง

✨ G's Spot แต่ก่อนราคาหัวละ 12,000++ บาท/คน
แต่ตอนที่ออนไป มีการปรับราคาลง เพราะวัตถุดิบบางส่วนไม่สามารถนำเข้ามาได้ จึงได้ปรับทุกอย่างให้สอดคล้องกับสถานการณ์ต่างๆ โดยจะราคาตกหัวละ 5,000++ บาท/คน นั่นเอง

✨ อาหารชาติอะไร? เป็นอาหาร Indian หรอ?

อาหารที่นี่จะเป็นแบบ Progressive Indian Gastronomy ดังนั้นจะไม่ใช่ Indian แบบหนักๆ ส่วนตัวแล้ว..ออนเป็นคนไม่ทานอาหาร Indian (นอกจาก Chicken Butter และ Nan) ตอนแรกก็แอบกังวลว่าจะไหวมั้ย เพราะไม่ใช่สายเครื่องเทศ หรืออะไรเผ็ดๆ ฉุนๆเท่าไหร่ แต่พอได้ลองแล้ว..มันแทบไม่ใช่อาหาร Indian แบบที่เราคิดเลย หลายๆเมนู หลายๆคำ กินเข้าไปแล้ว ก็ยังเดาไม่ออกว่าคืออะไร เพราะ After taste มันไม่ใช่สิ่งที่เราคิด หรือแม้แต่วัตถดิบบางอย่าง ที่ปกติจะมีกลิ่นแรง ที่นี่ก็ทำให้กินจนเราไม่รู้เลยว่ามันคือสิ่งนั้น

✨ ราคาเกือบหมื่น คุ้มมั้ย?

คำถามนี้บอกเลยว่าตอบยาก เพราะคำว่า "คุ้ม" ของแต่ละคนไม่เหมือนกัน บางคน Value จากรสชาติ จากการบริการ หรือจากประสบการณ์โดยรวมทั้งหมด แต่สำหรับออน.. ถ้าใครเป็นสาย Fine-Dining หรือ Foodie ก็ไม่อยากให้พลาด เพราะออนถือว่าเป็นอีกร้านที่มีความคุ้มค่าในหลายๆอย่าง ทั้งรสชาติอาหาร ความแปลกใหม่ ประสบการณ์ที่ไม่ซ้ำที่ไหน (และยังไม่คิดว่ามีที่ไหนซ้ำ) และแน่นอนว่าอย่างน้อยๆก็ได้เก็บดาวอีก 2 ดวงเพิ่มเข้าไปใน Collection

✨ ความรู้สึกหลังจากที่ได้กิน

ที่นี่จะเสิร์ฟทั้งหมด 18 คอร์ส โดยมีรอบเดียวคือ 18.30 และจบที่เที่ยงคืน
ใช่ค่ะ! เที่ยงคืน! ฟังไม่ผิดค่ะ ด้วยความที่เค้าไม่ได้แค่เสิร์ฟอาหารแล้วจบ แต่เค้ามีการ Entertain ต่างๆในแบบที่ยังไม่เคยเจอที่ไหน รวมถึง Experience ที่ได้คุยกับเชฟ มันก็จะลากยาวประมาณนี้

ตอนออนไป ออนโชคดีมากที่ได้เป็น 1 ใน 2 คนที่เชฟชวนให้เข้าไปดู Back Kitchen ให้เห็นวิธีการจัดเก็บวัตถุดิบต่างๆ การเตรียมข้าวหุงทีละจาน หรือแม้แต่วัตถุดิบที่พึ่งนำเข้ามาใหม่ๆ สดๆ ณ วันนั้น ไม่ว่าจะเป็น Truffle หรือ Uni ทำให้ออนได้ถ่ายรูปมาเป็นที่ระลึกเพิ่มด้วย

อาหารบอกเลยว่า 18 คอร์ส คือจุกกก จุกกกกจ้า
ถือว่าอร่อยใช้ได้เลยนะ หลายๆจานหน้าตาแปลก แต่กินแล้วอร่อยมาก หลายๆอย่างที่ดูไม่น่าจะชอบ แต่พอลองแล้วก็คือดี ที่สำคัญรสชาติมันกลมกล่อม ไม่ได้ Indian หนัก เครื่องเทศฉุน หรือรสเผ็ดแรง ที่สำคัญออนชอบการที่เชฟใช้แต่ Sustainability sources ไม่ว่าจะเป็นปลา เป็น Truffle หรือแม้แต่ Foie Gras (ไม่ใช้การ Force Feeding แต่เป็นแบบเลี้ยงให้อ้วนโดยธรรมชาติ) เชฟบอกว่าอะไรที่ไม่ใช่ฤดูของมัน ก็จะไม่ใช้ เพื่อรักษาทรัพยากรทางธรรมชาติ

สรุปสั้นๆให้ว่า "เข้าใจแล้วว่าทำไม Gaggan ถึงได้อันดับ 4 ของโลก"
มันเป็นอีกประสบการณ์ที่แปลก ใหม่ และสนุกไปในตัว ไม่ใช่แค่การกินอาหารธรรมดา แต่มันคือการกินอาหารเกือบ 6 ชั่วโมง with a whole new experience (ที่ออนจะไม่สปอยล์)
