昨晚在Octavium 吃飯,才發現我很欣賞的侍酒師Wallace過檔了在此服務。Wallace雖然看起來很成熟,但其實年紀很輕,如沒記錯是90後⋯⋯盡管如此,試過他的pairings,就能明白才華與天份是一件年紀無法衡量的事。以前他在Haku,我已非常驚艷,在那個幾百塊的預算空間,配出令人很有驚喜也很玩味的效果!不簡單!不是經驗,更多的是一種獨特的視角與洞悉力。為了確定自己的判斷,有一次特地帶了很懂酒也很懂得pairings的好朋友R去吃飯,一試Wallace的功力,R非常喜歡,也認同我說的「能在幾百塊的預算配出這樣有神采的效果,殊不簡單」。
昨晚欣喜重遇故人,當然是交給Wallace發辦了。整體極滿意,拍案叫絕的是他以「意大利vin jaune」(我自己的叫法)Vernaccia do Oristano 去配搭我們off menu菜式紅蝦手造意麵,簡直是神乎其技,讓我想站起來拍手,有多久沒遇過這樣絲絲入扣的pairing了!太有才了!當時馬上發了一個簡訊給R報告一下,我想只有他懂我的感覺。果然R馬上回我:I like his pairings a lot 。
我想我會另外寫Wallace的pairings的精彩所在。與此同時,想到昨晚的紅蝦意麵配「意大利vin jaune」,我肯定會回去encore 。給我一大盤意麵,加一杯酒,已勝卻人間美食無數!

Personally this was an once off Eye Opener for the Hong Kong Dining Scene. When Nordic meets x Italian chefs, also with an equally themed New Zealand Produce. If you don't mind me explaining.. I think Chef @Silvioarmanni at HK Michelin 1 🌟 Octavium, who operates on behalf as Head Chef of the exploratory kitchen side of amazing @Umberto_bombana Michelin 3 🌟🌟🌟 rated 8 1/2 Otto e Mezzo. Was quite polite open minded, and also let Chef @Jimlofdahl to also explore his own menu on the night, himself who is a sister Hong Kong restaurant to Sister Michelin 3 🌟🌟🌟 @Restaurantfrantzen in Sweden. A definitive explosive night only possible by 2 Dynamites of Chefs who wanted to push one another to explore the boundaries, hence why I feel this was one of the best meals I had in 2019!
