🎄聖誕節快來了☃️來分享香料熱紅酒Mulled Wine的配方和我自己的煮法唷❤️ 這個配方煮出來的熱紅酒是甜度低帶果香,搭配很真實濃郁的香料氣息🍷
✅準備材料 (750ml紅酒份量)
➡️紅酒一罐 (便宜紅酒即可,因為要加水果和香料調製~建議挑選偏花果香,不要太酸或口味太厚重的紅酒)
➡️柳橙(或其他柑橘類水果)一顆切片,柳橙籽要挑掉,不然會苦
➡️中型蘋果 一顆切片,蘋果籽也要去掉,不然會苦
➡️肉桂棒 Cinnamon Sticks *2
➡️月桂葉 Bay Leaves *2
➡️八角 Star Anise *2
➡️丁香 Cloves *12-15
➡️肉荳蔻 一整顆 敲碎 A whole nutmeg, grated
➡️砂糖 二大匙 Sugar 2Tbsp
Ps, 香料都要使用完整乾貨~不要用香料粉喔~
✅草莓私心推薦煮法🍷
➡️紅酒整罐倒入鍋中,加入水果片和砂糖,以中小火煮3分鐘 (此時不需攪拌,靜置加熱即可)
➡️3分鐘後加入其他香料們續煮到冒煙即可關火(不要煮滾喔),在這幾分鐘內一邊煮,一邊用湯匙把柳橙片壓一壓,這樣可以壓出橙汁和橙皮香氣
➡️關火後,把細碎果肉和香料都過濾乾淨後,紅酒放入大容器中,推薦可以把肉桂棒·月桂葉·八角和完整的柳橙片·蘋果片泡入紅酒中,這樣從開始喝到最後可以品嚐循序漸進不同層次的水果香料氣息喔❤️

Mulled Wine 🍷
Vin Chaud
食材 Ingredients:
丁香 Clove 2g
肉桂棒 Cinnamon stick 1
荳蔻 Nutmeg 1
八角 Star anise 2-3
細砂糖 Caster sugar 25g
新鮮柳橙 Oranges, juiced 2
新鮮檸檬 Lemon,juiced 1
紅酒 bottle of Red Wine 1
作法
1. 準備一湯鍋, 將所有香料與細砂糖放入鍋中
2. 水果切半擠出果汁放入鍋中,倒入一罐紅酒
3. 小火煮至微冒煙, 關火悶5分鐘,即可熱熱享用

來到Boxing day,聖誕餘溫仍然熾熱,大家仍沉醉在聖誕派對和美食當中,餐桌上除了必備的火雞和蜜汁火腿,少不了一杯暖暖的Mulled Wine香料酒或香料茶,外國人慶祝聖誕用上不少香料,原理和我們冬天飲用薑茶暖身差不多吧,因為所使的丁香、肉桂、八角、肉荳蔻等香料屬性溫熱,味道芳香之餘亦有理氣解鬱及開胃作用,能令人在節日心情更愉快。
丁香 — 性溫,具有溫胃散寒,開胃進食,暖腎強腰作用。適合胃寒嘔吐、反胃呃逆、胃寒腹痛、腎陽不足、子宮虛冷陰痛者食用;惟注意胃熱嘔逆者、陰虛內熱及有偏熱症狀者如喉嚨痛、口瘡、暗瘡者勿吃。
肉桂 — 性熱,能溫中散寒,暖脾胃,溫經通脈。適合怕冷、手腳發冷、胃寒、寒性月經不適等。注意身體有偏熱症狀如陰虛火旺、痔瘡、大便乾燥、孕婦不宜服用。
八角 — 又名大茴香,性溫,具散寒溫陽、溫腎暖肝、理氣開胃功效,適合胃寒呃逆、腎虛腰痛者食用;惟注意陰虛火旺、糖尿病、目赤腫痛者不宜多吃。
肉荳蔻 — 性溫,有澀腸止瀉,溫中行氣功效。適用於脾腎虛寒久瀉、脾胃虛寒,久瀉不止、胃寒脹痛者,能夠溫中暖脾;惟注意濕熱瀉痢者忌用。
Christmas spices to warm your body and mind
Boxing day is here. You still can feel Christmas in the air. Everyone is still enjoying the Christmas parties and gourmet food. In addition to the necessary turkey and honey ham on the table, a warm Mulled Wine or spice tea is a must have. Foreigners would add many spices into the Christmas meal, the principle is similar to ginger tea in winter to warm the body. The nature of spices such as clove, cinnamon, star anise, nutmeg is hot. In addition to the flavor and aroma, it also can regular qi, reduce stress and stimulate appetite. It makes people happier during the festivities.
Clove- warm in nature, can warm the stomach, dispel cold, stimulate appetite, warm the kidney, strengthen waist. It is suitable for those who suffer from vomiting due to cold stomach, nausea, hiccups, abdominal pain due to cold stomach, insufficient kidney yang qi, and asthenic cold uterus pain. Those with vomiting due to heat in stomach, yin deficiency, heat-related symptoms such as sore throat, canker sore, pimple should not eat.
Cinnamon- hot in nature, can warm the body, dispel cold, warm the spleen, stomach and meridians. It is suitable for those with aversion to cold, cold limbs, cold stomach, cold type of menstrual discomfort. It is not suitable for those with heat-related symptoms such as yin deficiency, hemorrhoids, dry stools and for pregnant women.
Star anise- warm in nature, can dispel cold, warm the yang, kidneys and liver, regulate qi and stimulate appetite, and is suitable for those with cold stomach, hiccups, asthenic weak kidney and lower back pain. Those with yin deficiency, diabetes, eye redness and pain should not eat too much.
Nutmeg- warm in nature, can relieve diarrhea, warm the body and regulate qi. It is suitable for those with long-term diarrhea due to asthenic weak spleen and kidneys, cold stomach and pain. It can warm the body and spleen. But those with damp-heat diarrhea should not eat.

Also known as spiced wine, vin chaud, glühwein, mulled wine is a traditional drink during winter, especially around Christmas. It usually made with red wine along with spices, orange and lemon and served hot or warm.
Making mulled wine couldn’t be easier. Just combine the spice you like, red wine, orange, sugar, and bring it to a boil, then reduce to low heat to simmer for 10 minutes. It’s down. If you’ve never had this for holidays. It’s time to make one to warm you during winter. Here’s a recipe for simple Mulled Wine, hope you enjoy it. :)

Simple and Perfect Mulled Wine Recipe
☞ Yields: 2 Servings
✎ Ingredients
red wine 500ml
orange 1
lemon 1
whole clove 3
cinnamon stick 1
star anise 1
ginger 3 small pieces
nutmeg 1
granulated sugar 60g
black pepper 1g
honey 10g
✎ Instructions
1. Pour the wine into a pot, allow to decant for a while.
2. Cut off the top and bottom ends of the orange. Hold and roll the orange around in hand with a smooth, even motion. Slice off the skin in strips until the peel naturally cuts off.
3. Slice the skin of lemon in the same way.
4. Collect all peels and put them in a bowl. Set aside.
5. To minimize bitterness, remove the white pith of orange and lemon by knife.
6. Combine sugar and all spices in a dry saucepan over a med-low heat. Stir evenly for 1 minute, then as soon as you can smell the flavor.
7. Twist all citrus rinds to release aroma before drop them into the pan.
8. Making syrup. Squeeze one orange and half lemon to get the juice. Stir well and bring to a boil.
9. Pour the red wine, and bring it to a boil again, then reduce the heat to low, let it simmer for 10 minutes.
10. Time’s up. Remove from heat and strain through a fine mesh sieve.
11. Take a lime and rub on the glass for extra flavor and coated with salt. Pour the hot spices red wine, topped with your favorite garnishes. Enjoy.

Ingredients A:
Red Wine ------------------------------------------------ 600 ml
Fresh Squeezed Orange Jucie --------------- 1.5 pcs
Fresh Squeezed Lemon Jucie ---------------- 1.5 pcs
Segmented Orange and Lemon flesh ------ 0.5 pcs each
Orange and Lemon Zest ------------------------- 0.5 pcs each
Brown Sugar ------------------------------------------ 0.5 cup
Star Anise ---------------------------------------------- 2 pcs
Cinnamon ---------------------------------------------- 2 pcs
Cloves --------------------------------------------------- 6 pcs
Cardamon --------------------------------------------- 4 pcs
Ingredients B:
Nutmeg -------------------------------------------------- A pinch
Method:
1. Crush the Cardamon before use.
2. Put Ingredients A into a saucepan and cook under medium low heat until it just comes to boil. .
3. Turn off the heat and add Ingredients B. Put the cover on for 10 minutes to encourage the flavors to infuse.
