2019米芝蓮名單剛公報，當中，三星餐廳新增一個熟悉名字：Caprice。久違了四年，這家高級法國餐廳，今年重奪最高榮耀，絕對有迹可尋。Caprice，它剛好集合結了一家好餐廳的各項元素。
典雅有氣派的裝潢，30年代巴黎+Art deco壁畫＋一點巴洛克混中國風，華麗而含蓄的水晶吊燈、寬敞座位及間距，無死角180度海景view，一個容納30位廚師同時料理的大型開放式廚房，五官感受一流。當然，服務更是好得沒話說，幾乎一張枱配一個專屬服務員，斟水送餐巾拉椅上餐想到的沒想到的還未提出，客人一個眼神晃動，就會有人不徐不疾為你服務，然後消失於閣下觸及的視線範圍，這種周到，最難做好。
當然美食美酒是重頭戲。來自巴黎George V酒店的年輕侍酒師，剛剛奪取最佳Pastry Chef的甜品師Vivien ，加上那個嚇人的芝士珍藏，8成法國芝士，每星期空運來貨，放在專櫃熟成保存，要吃最premium的48個月Comte，不是難事。用餐自是不會失望。四季酒店有名的新鮮麵包，源源送上；配搭法國名牌Bordier牛油，香軟濃滑，一口接一口。
前年接管Caprice的第三任總廚Guillaume Galliot，本身就是天才廚師，12歲立志當廚、去過巴黎三星餐廳名廚當入室學徒，後來去紐約當廚、又去加勒比海學習香料料理，23歲去跑到新加坡Raffles酒店，成為那裏最年輕的副主廚。之後繼續遊歷亞洲，幾年前落戶澳門The Tasting Room，隨即冒升成為二星餐廳。他擅長把亞洲食材及風味元素，結合他的傳統法國料理手法。你說是fusion，他堅持是contemporary French。
那道的阿拉斯加蟹肉沙律，來自兒時去Brittany海邊度假的回憶，蟹肉混入了切碎了的gillardeau生蠔，配搭特製的鹹鮮海鮮啫喱，加上魚子醬，每一口都是海洋精華。另一味也是獨創菜式。將越南的可可豆殼剖開兩半，放入30日大、大廚Loire Valley老家的小農養殖的血鴿先焗再煎，肉嫩加可可香，配搭鴿血做成的醬汁， 將傳統法國菜的烤乳鴿提升至另一層次。
最後來一口Comte，一口香甜梳乎厘，一杯侍酒師精選的甜酒，這樣的法國fine dining值回票價。
