{Recipe below} 红槽烧鸡 Braised Red Glutinous Wine Lees Chicken
Made this hearty dish with @wricewine nutritional wine lees ($11.90) that’s handcrafted by the third generation of a rice wine artisan family. It’s so fragrant and yummy! 👍 For those unfamiliar to wine lees 紅槽, it’s a nourishing ingredient and a by product of wine-making, commonly used by mid-wives in post natal recovery (很補的喔) due to the natural red yeast being able to improve digestion, promote blood circulation and lower cholesterol. The rice wine ($19.90) is all-natural and pure with no added sugar or preservatives and gluten-free.

{RECIPE-serves 2-3// this recipe does not call for sugar, water or any starch mixture}
2 chicken drumsticks (skin on)
Ginger slices (as preferred)
2 tbsp @wricewine 紅槽
1 bowl of Shaoxing Wine
1 Tbsp mirin
Spring onion 1 stalk
1. Pan fry the chicken skin down without any oil until half cooked, add in the ginger slices to the oil to infuse flavors
2. Transfer the half cooked chicken to chopping board, cut into chunks and return them to the pan. Add 2 tbsp of red wine lees (p.s. the redness increases as u fry) and stir fry well
3. Add Shao Xing Wine and cover to simmer and reduce the sauce for 10minutes. (No corn starch needed as there is natural starch in the wine lees)
4. Add in mirin and the chopped spring onions stalks. Stir fry for 15 secs or so. Garnish with chopped spring onion and served. 🍚

Actor and martial-arts expert Bruce Lee dies at age 32
On July 20, 1973, the actor and martial-arts expert Bruce Lee dies in Hong Kong at age 32 from a brain edema possibly caused by a reaction to a prescription painkiller. During Lee’s all-too-brief career, he became a movie star in Asia and, posthumously, in America.
Jun Fan (Bruce) Lee was born on November 27, 1940, in San Francisco, California. At the time, his father, a Chinese opera star, was on tour in the United States. The family moved back to Hong Kong in 1941. Growing up, Lee was a child actor who appeared in some 20 Chinese films; he also studied dancing and trained in the Wing Chun style of gung fu (also known as “kung fu”). In 1959, Lee returned to America, where he eventually attended the University of Washington and opened a martial-arts school in Seattle. In 1964, Lee married Linda Emery, who in 1965 gave birth to Brandon Lee, the first of the couple’s two children. In 1966, the Lees moved to Los Angeles and Bruce appeared on the television program The Green Hornet (1966-1967), playing the Hornet’s acrobatic sidekick Kato. Lee also appeared in karate tournaments around the United States and continued to teach martial arts to private clients including the actor Steve McQueen. One of his his powerful quote mentioned: I am not in this world to live up to your expectations and you are not in this world to live up to mine!

Hello Youtube Fambam,
MY BEST FRIEND GOT MARRIED!! What an amazing day. Thinking about it makes me smile so much. As matron of honour, unfortunately I didn't have time to vlog very much. I hope you guys enjoy the footage we managed to capture anyway!
It has been crazy these few weeks trying to balance book, eyeshadow palette, building schools and the wedding but it has been so so so worth it. I'm going to miss having the girls at my place for rehearsals. You girlies all did so well and I am incredibly proud!

Kasujiru is eaten during the cold season. It is similar to Miso soup, cooked with Miso (soybean paste) and Sakekasu (Sake lees).
Sakekasu is leftover bits of the Sake making process, rich in nutrients, having a high value of beauty and health effects :)

Difficulty: Easy
Time: 40min
Number of servings: 6-8
Ingredients:
800g (1.8lb) turnips with greens
200g (7oz.) Konnyaku (yam cake)
100g (3.5oz.) carrot
4 Shiitake mushrooms
2 Aburaage (deep-fried tofu pouch)
1200ml Dashi stock: https://www.youtube.com/watch?v=ObUMAxtnCCA
100g (3.5oz.) Sakekasu (Sake lees)
4~5 tbsp. Miso (soybean paste)
Shichimi-togarashi (seven flavor chili pepper) if you like
Directions:
1. Tear Konnyaku into chunks with a spoon or your hands. Boil from water then drain.
2. Wash Aburaage with running water (to remove excess oil), drain well, and cut into thin strips.
3. Cut turnip bulbs into wedges. Chop turnip greens coarsely.
4. Thinly slice the carrot (cut into thin rounds, half moons, or quarter rounds depending on the size of the carrot).
5. Thinly slice Shiitake mushrooms.
6. Put Dashi stock in a large pot. Add turnip wedges, carrot slices, Aburaage, and Konnyaku, then cook for 15 minutes. Meanwhile, dilute the Sakekasu and 4tbsp. of Miso in a little bit of broth to prevent lumping.
7. Return the diluted Sakekasu and Miso to the soup. Add Shiitake and turnip greens, then cook for 5 minutes. Taste and add more Miso to adjust the flavor.
8. Serve in a dish and sprinkle with Shichimi-togarashi (seven flavor chili pepper) if you like.
*the green leaves of turnips are where most of the nutrients are found
