飲食不節慎防三高
朱先生:「最近做身體檢查,醫生說我在『三高』邊緣,如何解決這個中年危機?」
CheckCheckCin:「三高」即高血壓、高血糖及高血脂,可說是都市人的富貴病,長期飲食不節,經常進食高脂肪、高糖份、高鹽份食物,再加上缺乏運動、壓力大、作息不正常等因素,令各種身體指數超標。西醫會以各種藥物來降低血壓、血糖及血脂,而從中醫角度來看需要改善體質,必須改變生活習慣,才能從根源上緩解「三高」症狀。一般來說痰濕、血瘀及陰虛體質人士比較容易患上「三高」,因為痰濕體質人士脾氣虛弱,水液運化失調;血瘀體質人士則血脈不通;陰虛體質人士作息顛倒容易令血壓上升。
想改善「三高」情況,宜諮詢註冊中醫師對症下藥調理體質,飲食上宜清淡,多菜少肉,減少外食或加工食品,避免進食高脂肪、高糖份、高鹽份的食物;養成定期做運動的習慣,一星期最少三次,每次最少30分鐘,強度以輕微出汗為宜;避免晚睡熬夜;尋找合適的減壓方法,因為焦慮不安等負面情緒也會導致血壓上升。
山楂黑木耳茶
功效:活血涼血,紓緩肥胖、高血脂等症狀。
材料:山楂15克、黑木耳15克
做法:材料切絲,洗淨放保溫瓶,以熱開水沖洗一遍,再注入熱開水焗10分鐘即可。此茶可反覆沖泡至味淡,建議一星期飲用2-3次,連續兩星期為一個療程。
注意:孕婦不宜飲用。

“I just completed a body check-up recently, and the doctor told me I’m at risk of getting the three highs. What can I do to solve this mid-life crisis?”
CheckCheckCin: The three highs refer to high blood pressure, high blood sugar, and high cholesterol, and urban dwellers tend to have these problems. Poor dietary habits such as consuming foods that are high in cholesterol, sugar, and sodium, and the lack of exercise, inability to cope with stress, and unhealthy lifestyle would cause a spike in the readings.
According to Chinese Medicine, aside from using medication, an individual should improve the body constitution and lead a healthier lifestyle if he or she wishes to get these conditions under control.
In general, individuals with the damp heat, blood stasis, and yin-deficient body constitutions would develop the three highs more easily. Individuals with a damp heat body constitution have asthenic qi and spleen, and the fluid would stagnate easily in the body. Those with the blood stasis constitution may experience the stagnation of the blood and the vein. People with a yin-deficient constitution will experience a spike in their blood pressure if they constantly mess with their biological clock.
To improve the condition of the three highs, consult registered and licensed Chinese physicians, so they can prescribe you the right medicine and customize treatment for you.Eat lighter food, take more vegetables and cut down on meat, reduce eating out and processed food, and avoid eating foods that are high in cholesterol, sugar, and sodium.
Cultivate the habit of exercising regularly. Make it a point to exercise and sweat three times a week, and each session should last at least 30 minutes. Avoid sleeping late and find the most appropriate way to relieve your stress, as negative emotions can also trigger a surge in the blood pressure.
Chinese hawthorn tea with Black fungus
Effects: Activates and cools blood, relieves obesity and hyperlipidemia.
Ingredients: 15g dried Chinese hawthorn, 15g black fungus
Preparation: Cut the ingredients into slices and place into the thermos. Rinse with hot water once. Then add in hot water again and steep for 10 minutes. This tea can be rebrewed until its flavor weakens. For best results, drink consecutively for 2-3 days a week. Two weeks for a treatment.
Note: Not suitable for pregnant women.

Tom yum goong is a type of sour and spicy Thai soup, usually cooked with shrimp or a mix of seafood, like squid, fish. In Thai language, tom means the boiling process, and yam means “mixed” or “salad”. The essential ingredients of tom yum are herbs such as lemongrass, galangal, kaffir lime leaves, these 3 main herbs give the soup flavor, they are absolutely necessary. The rest of the ingredients are lime juice, fish sauce, Thai Chili paste and red chili crushed. Tom Yum is spicy, sour, savory, and addictive. Hope you like this video.

How to make Tom Yum Goong Soup
Tom Yum Soup Recipe
☞ Yield: Serve 2~3
✎ Ingredients
shrimp 4, medium size
oyster mushrooms 80g
lemongrass 2 stalks
galangal 2 inch chunk
kaffir lime leaves 5
shallots 4
chilli Q.S
cilantro roots 2
Thai chilli paste 30g (1.5tbs)
fish sauce 35g (2.5tbs)
lime juice 20g (1.5tbs)
chicken stock 500ml
sugar 7g (1/2 tbs)
* If the chicken stock is unsalted, you can add 1/4 tbsp salt
*Most store-bought chicken stocks are salted, so don't need to add salt, you can mix 250ml stock with 250ml of water.
✎ Instructions
1. Use a scissor to cut the sharp point of the shrimp (telson and rostrum), but keep the head-on, also cut the antennas and legs. Then open the shell along the back of the shrimp and remove the shell and vein. Spoon the shrimp yellow in the head, it’s full of flavor, set aside.
2. Slice the galangal. Unlike ginger, galangal is too hard to cut through, so be carefully. Crush the lemongrass with the back of the knife, and cut into small chunks. Remove the thick vein from the lemon leaves, then tear into small pieces. Remove the leaves from cilantro, but keep the roots.
3. Pour oil into the skillet, add “shrimp yellow” and sauté over medium heat, add Thai chili paste, and cook until well combined.
4. Pour 500ml stock into the soup pot, bring to a boil, add cilantro roots, galango, lemongrass, shallots and lemon leaves, turn to the low heat, cook for 3 minutes.
5. Add shrimp yellow chili paste, stir slightly until well combined. Add mushrooms, cook until soft.
6. Add fish sauce, sugar and lemon juice.
7. Add shrimp and cook until they are all cooked through. Taste and add more seasoning if needed.
8. Turn off the heat and add chiles, but this is optional.

フライパン1つで生米から作る、もちもちだけど口の中でほどける、パエリアみたいなピラフっぽい変なチャーハンです
【材料】
・油 小さじ2
・にんにく 1かけ
・生米 100g
・お湯 250ml
・塩 少々
・えび 6匹くらい
・油 小さじ2
・全卵 1個
・鶏ガラスープの素 小さじ1/8~1/4
・ねぎ 適量
・塩 適量
・醤油 小さじ1/4
・酒 小さじ1/4
【準備】
・えびの殻を剥いて背わたを取り、片栗粉・水で揉んで掃除する(むきえびでも掃除する)
・にんにくを半割にして芽を取り除く
・ねぎをみじん切りにする
【作り方】
1. フライパンに油小さじ2・にんにくを入れて弱火で炒め、にんにくが軽く色づいてきたら生米100gを加えて軽く炒める
2. お湯250mlを入れ、塩少々を加えてエビをのせ強火にし、エビの色が変わったら裏返し火が通ったらいったん取り出しておく
3. 強火で2~3分たったら弱火に落として、十数分水分が飛んでお米が炊けるまで加熱する(えびは1~2分で取り出す)
4. 水分が飛んで音がパチパチとなってきて米が炊けたら、真ん中をあけて油小さじ2を入れ、溶いた卵1個を流す
5. 卵とご飯を馴染ませ、ほぐすように切り混ぜ、鶏ガラスープの素小さじ1/8~1/4を加えて引き続きほぐす
6. ある程度ほぐれてきたらねぎ・塩を加えて味を見て調整し、最後に真ん中をあけて醤油・酒各小さじ1/4を加えてふつふつしてきたところを混ぜて出来上がり

[Preparation]
・Peel the shrimp and remove the dorsal vein. Rub it with potato starch and water to clean (Clean with peeled shrimp.).
・Cut the garlic in half and remove the buds.
・Mince the green onion.
[How to make]
1. Add 2 teaspoons of oil and garlic in a pan and stir-fry it over low-heat. Add 100 g of raw rice when the garlic lightly browns and lightly stir-fry it.
2. Add 250 ml of hot water. Add a bit of salt. Add the shrimp and turn it to high-heat. Flip it when the color of the shrimp changes and take it out once it cooks through.
3. Turn it to low-heat after 2-3 minutes on high-heat and cook it until the water evaporates for around 10 minutes and the rice cooks (Take out the shrimp in 1-2 minutes.).
4. Once the water has evaporated and the rice has cooked, open the middle and add 2 teaspoons of oil and pour in 1 beaten egg.
5. Mix the egg and rice together, and then mix them roughly. Add 1/8 to 1/4 teaspoon of chicken stock powder, and then continue to loosen them.
6. Add the green onion and salt when it loosens to a certain extent. Check the taste and adjust it. Finally, open the middle and add 1/4 teaspoon each of soy sauce and sake. Mix it when it bubbles and it will be complete.
