I was craving for hawker food recently. Especially what I am cooking today. Fish head noodles soup 鱼头米粉 (Yu Tao Mai Fun) is a popular hawker food in Malaysia. It is believed to have originated from the Teochews. I was mentioning Hokkein but actually it is more Teochew as I suddenly remember the pickled plum and salted vegetable are very common ingredients for Teochew's dishes, especially steamed fish. It is one of my favourite fish soups with noodles. Here this is my first time trying to cook this. I must say I love it. My kids too. I am proud of myself. LOL!
Ingredients for 10 pax:
. 2 kgs grouper fish head, cut into big pieces. U can use any big fish head
. 2 pcs dried fish
. 2 pack thick rice noodles
. 2 pcs pickled mustard/salted veggies, cut into long strips
. 200 g young ginger, sliced thinly
. 5 tomatoes, cut into wedges
. 2 medium or 5 small size tofu
. 6 pickled plums, mashed or whole pieces
. oil
. 5 litres water
For marination of fried fish head:
. 2 tsp white pepper
. 5 tsp salt
. 4 cup cornflour flour, or tapioca flour
For seasoning:
. 2 tbsp fish sauce
. 1tbsp white pepper
. salt to taste (optional)
. 3 tsp sesame oil
. 1 can or 2 evaporated milk
. 6 tbsp Shao Xing Wine or more (optional)
Garnishing:
. spring onions, sliced or cut
Add-on: You can always add extra vegetable like Chinese cabbage or Chinese lettuce. Make sure you have this with cut chilis with soy sauce or some sourish spicy sauce. I also love adding fried onions in my soup.
I will cook this more often for sure.

天菜不能缺貨,英國科學家與農業公司合作開發萵苣採收機器人

為了降低英國農業季節性勞力不足的問題,政府資助大學研究團隊,與英國農業公司和農業機具廠商,合作開發萵苣採收機器人,確保英國人每天都能吃到最愛的生菜沙拉。
卷心萵苣(Whold head)和結球萵苣(Iceberg)是英國最受歡迎的生菜種類,每年產量達 99,000 公噸,產值約 1 億 7,800 萬英鎊(約台幣 69 億元),但受限於英國工資高昂,農業勞力高度仰賴外國,尤其是北非、東歐與中東地區的移民補足,但近年來脫歐與 COVID-19(武漢肺炎、新型冠狀病毒)疫情的雙重影響下,農業工資大幅漲價,英國越來越難取得穩定的季節性勞動力採收萵苣,因此政府開啟這項研究計畫,嘗試用機器人為穩定勞動力來源。
「季節性勞力不穩定的問題,已經影響英國農業很長一段時間,且由於萵苣價格漲幅受到政府限制,廠商利潤越來越少。」農業公司 PDM Produce 總經理 Dermot Tobin 表示,過去幾十年來,英國超市架上的萵苣,全都是由人工採收而來,現在工資上漲和勞力來源不穩,讓農業公司必須加速機器人科技運用。
「近 30 年來,農業採收技術進步很快,從採收、分類、包裝、產地證明、裝箱到出貨,都可以在農場內快速的進行。」另一間合作農業公司 G’s Fresh 創新研發部經理 Richard Ellis 指出,目前除了採收,其他程序的工作都已經可以使用機器進行,但採收萵苣由於技術較為複雜,目前的農業機具還無法自動化,因此必須加入 AI 與機器視覺(Machine Vision)技術。
因此哈柏亞當斯大學(Harper Adams University,HAU)與西英格蘭大學(University of West England,UWE Bristol)的農業研究團隊,將使用農業機具廠商 Grimme UK 生產的韭菜自動採收機為基礎,加入 AI 演算法與機器視覺技術,讓採收機可自動將田地萵苣舉起,移開外層菜葉,瞄準根部切斷菜莖,完成採收程序,團隊估計使用機器人進行採收,可降低 50% 農業人力需求。
開發團隊預計 9 月前完成萵苣採收機器人原型機,並開始測試,由於萵苣在歐盟及北美都是廣受歡迎的蔬菜,產量與產值都相當龐大,且同樣面臨季節性勞力不穩的問題,因此開發團隊有信心萵苣採收機器人,未來不論國內或國際市場,都非常有競爭力。

Chicken Saikyo-Yaki(for 1 serving)
1 chicken thigh
2 tbsp Miso Doko
some Daikon Oroshi
some salad
some onion soy sauce dressing
some green onion
Miso Doko(for 150 g)
100 g sweet white miso
1 tbsp mirin
1 tbsp Yuzu(or lemon) juice
1 tbsp Shio Koji
1/2 tsp Ichimi Togarashi
Gusto's Onion soy sauce dressing(200cc)
1 clove garlic
18/ head onion
50 ml oil
50 ml soy sauce
50 ml mirin
50 ml vinegar
1 tsp potato starch
2 tps water
Salad(for 2 servings)
80 g cabbage
15 g red cabbage
10 g carrot
30 g lettuce

For this episode, we headed to TamJai SamGor Mixian to demolish a MASSIVE 6KG Spicy Mala Noodles Bowl! TamJai SamGor serves authentic mixian (rice noodles) and is located at Bedok Mall, Chinatown Point and Vivocity. A chain originating from Hong Kong and even awarded Bib Gourmand in Michelin Guide Hong Kong and Macau, TamJai SamGor offers customisable mixian and Guo Qiao with 16 toppings in it. You get to choose your soup base - bestsellers being the Ma La Soup and the Wu La (charred pepper) Soup.
For my challenge, I opted for the Wu La Soup with 1/10 Mild and loaded it up with most of their toppings such as pork, chicken, fishballs, pork liver, pork belly, tofu puffs, beancurd skin, beef, lettuce and beansprouts. The base was a hefty 5 servings of rice noodles and the entire bowl was filled with Wu La Soup. Note that there are 10 levels of spiciness you can choose for your soup.
The broth was reminiscent of a Bak Kut Teh broth crossed with a Thai Boat Noodles broth. It was rich and peppery. The noodles were exceptional, firm, bouncy and still giving bite even after sitting in the broth for a long time. They soaked up the broth wonderfully. For the toppings, I especially enjoyed the pork belly, which were filled with flavour from the fattiness and had some chewiness to them, and the cuttlefish balls, which were firm and bouncy with a good amount of meat in them. Apart from the toppings shared in the video, I have also shortlisted pig stomach, bamboo fungus and tail-on shrimp as my pick to be sold in TamJai SamGor.
It started raining just as filming began, which made me realise that Guo Qiao is perfect for a such a day, warm and comforting while its cold and rainy outside. Each Guo Qiao also comes with minced pork and pickled vegetables. Note that the pork is on the sweet side which actually works well to cool the heat from the soup.
I completed this challenge in 28 minutes, a good start after my food poisoning incident. It was an enjoyable challenge, basically a hearty, warming bowl of soup that reminds you of home. TamJai SamGor also offers sides dishes and I tried their TuFei Chicken Mid-Wings, which were tender and heavily spiced with a cumin mixture. Do head down to TamJai SamGor to enjoy a wholesome bowl of noodle soup, especially on a rainy day!
