呢排成日聽到人講中環有一間精品咖啡店既
Barista曾經嬴過「World Barista Championship」
第二名,呢個獎項對一般既咖啡師絕對稱得上
最大既成就。而今日有幸黎到呢間「Cupping Room 」
一睹呢份榮耀,絕對係我既榮幸。係門口已經見到
人山人海,雖然今日係星期六姐,心諗洗唔洗咁誇張呀?
而店鋪有分兩層,樓上都坐滿哂人,而咖啡Bar
隔離就有一行吧枱。好唔容易終於比我等到有位,
感覺呢到既設計簡約得黎非常適合一眾Foodie打卡,
外面一大塊玻璃採光度十足,將灰色既牆身表露得
更加有特色。而店鋪外觀亦將黑白主題強調得好鮮明,
鍾意影相既朋友千其唔好錯過呀!👇

Tart試下,最有驚喜要大讚既係「檸檬蛋白撻」,
用到檸檬餡可以令酸甜平衡。再加埋檸檬味非常濃厚,
面頭既忌廉加強左整個層次感。而幾款Tart既撻皮都
做到得好酥脆,其次朱古力比我想像中好食,
味道唔會好單一,質感相當細膩。

的確同一般咖啡店更加優勝。Latte做得好精緻仔細,

keep返住Latte既濃度。而朱古力都唔惹少wor,
一杯三個層次,顏色做到漸變效果,唔會好似
一般cafe果種單一顏色,唔錯!整體呢間精品
咖啡店絕對係不二之選,就算唔想去連鎖品牌
都一樣可以有其他選擇既!

Hello friends! Today we're going to share with you how to make a classic French style pie: Strawberry & Blueberry Galette, aka Fruit Galette.
Fruit galette is so gorgeous in its rustic form. It’s a French pastry similar to a tart or a pie, the famous one is Galette des rois (king cake). The fruit galette is another free form pie with fruit filling, and the crust folded partway over the top of the filling, looks like a flat round pie. The best part is the pastry dough is simple to make for even beginners, it's quite a bit less effort than puff pastry, but the result is amazing.
In this video we'll show you how to make the delicious strawberry galette in an easy way. This galette recipe features jammy strawberries and an ultra flaky, buttery crust. Enjoy. :)

How to make French Strawberry & Blueberry Galette
French Style Strawberry & Blueberry Galette Recipe
☞ Yield: Serve 3~4
✎ Ingredients
📍 Pie dough
all purpose flour 100g (plus more for dusting)
granulated sugar 15g
a pinch of salt
unsalted butter 80g (Iced, cut into cubes)
iced water 30g
one egg
crystal brown sugar Q.S
📍fruits filling
strawberries 180g
blueberries 40g
granulated sugar 30g
corn starch 6g
half lemon zest
lemon juice 2g
✎ Instructions
1. In a medium bowl, mix flour, sugar and salt together until well combined.
2. Add very cold butter cubes and toss in the flour and until each piece is coated. Just take a piece of butter, using your fingertips to press it flat, then complete all. If your fingers warm up the butter too much, you can chill for 10 minutes
3. Add ice water and mix with your fingertips until the dough holds together enough to form a ball. If too dry, drop the remaining water. Lumps of dough are OK.
4. Put the dough onto a piece of plastic wrap, and flatten into a disk and refrigerate for 1 hour.
5. Make the fruit filling. Pinch off the green and slice the strawberries.
6. In a large bowl, combine the strawberries and blueberries with sugar and cornstarch. Zest half of lemon and squeeze a little lemon juice. Toss the fruit mixture together, set aside.
7. Lightly flour your working surface, so the pastry doesn't stick. Unwrap the dough and roll it into a 26cm/10-inch round circle about 3mm~4mm thick.
8. Pile the fruit filling onto the center of the dough and leave at least 2 inches border around the edge. Fold the edges of the dough up and over the filling.
9. Brush the edges with the egg wash and sprinkle with sugar.
10. Preheat the oven to 220C and bake for 25 minutes. Once baked, transfer onto a wire rack and cool completely.
10. Let cool before slicing and serving with an ice cream or a dollop of whipped cream to take it to the next level!

嗨!大家好,我是 Cassandre, 今天的『食不相瞞』我們要來做一道非常有法式鄉村風味的家常甜點:法式櫻桃派 ( French Cherry Clafoutis/ clafoutis aux cerises)。
法式櫻桃派是一道非常老派的家常甜點,據說它最早起源於十九世紀法國中南部的 Limousin 地區,這個地區以生產黑櫻桃聞名。法式櫻桃派雖然稱之為派,但因為不需要使用塔皮跟派皮,所以吃起來又不那麼像派的口感,它有點類似比較Q彈的卡士達布丁,所以也有人稱它為法式櫻桃布丁蛋糕,或櫻桃布丁派,甚至有人就直接稱呼它為克拉芙緹(Clafoutis 的法文直譯)。
第一次看到法式櫻桃派的食譜時,很驚訝它原來如此簡單,麵糊調起來也很容易,果然是符合家常的標準;在烤模的使用上,可以使用能進烤箱的平底鍋、焗烤盤或者蛋糕烤盤也都ok。還有就是櫻桃是季節性水果,如果不好買,也可以用其它的水果像是蘋果、水蜜桃、黑莓、紅莓等來替代哦!希望大家會喜歡這集的影片!:)

French Cherry Clafoutis 法式櫻桃派怎麼作呢?
下面是法式櫻桃派克拉芙緹的作法與食譜:
☞ 使用4吋 (10cm) 的圓型烤模,可以做兩份
📌 烤模尺寸換算方式:

✎ 材料/ Ingredients
☞ 醃漬櫻桃
新鮮櫻桃 12-14顆,約180-200g
糖粉 20g
檸檬汁 10ml
☞ 麵糊
蛋 2顆
糖粉 45g
杏仁粉 30g
中筋麵粉 20g
全脂牛奶 50ml
香草精 適量 10克
一小撮鹽
融化的奶油 5g
✎ 做法/ Instructions
1. 用流水洗淨櫻桃約5-10分鐘
2. 小心的清洗櫻桃,並去除蒂頭,之後瀝乾水份並用紙巾或廚巾拭乾水份
3. 使用去核器將櫻桃核去除,儘可能不要流失太多果汁,若沒有去核器也可用筷子或不鏽鋼的吸管來去(影片中有示範)
4. 小盆裡放入擦乾水份的櫻桃,灑上糖粉並淋上檸檬汁,稍微拌勻,放入冰箱漬30分鐘
5. 在大的料理盆中加入兩顆雞蛋、一小撮鹽,接著篩入糖粉、杏仁粉跟中粉,不用打發,只要攪拌至沒有結塊即可
6. 倒入牛奶、融化的奶油跟香草精,攪拌至混合均勻
7. 同時間,用軟化的奶油在烤模內部塗上薄薄一層,並裹上一層細砂糖
8. 把漬過的櫻桃放入烤模裡,然後倒入麵糊至櫻桃稍微浮起即可
9. 烤箱預熱至180°C, 烘烤 35~40 分鐘
10. 烘烤時櫻桃派會升高,但放涼後它會回縮,出爐後放到微溫
11. 灑上糖粉,待還有一點溫溫的,盡情享用

Hi, everyone. :) Today we'll show you how to make one of France's most popular dessert: Cherry Clafoutis. It combines fresh cherries in a rich, dense custard. Easy to make and great served in warm.
Clafoutis is a rustic French dessert from Limousin, where is best known for its sweet black cherries. Traditional clafoutis is made with cherries that still keep the pits. Because the pits have some almond flavor, but it’s not easy to eat, so it’s why we use pitted cherries and add almond flour.
Cherry clafoutis is sort of a thin custard-like batter baked in a buttered dish. Of course, other fruits like peaches, plums, blueberries can also work well in this dessert. This recipe is easy to make at home for beginner, hope you guys like it. Enjoy. :)

French Cherry Clafoutis Recipe
☞ Yield: 2 servings, two of 4 inch (10cm) baking mold
✎ Ingredients
☞ For Marinate
cherries 12-14, about 180-200g, washed and pitted
powdered sugar 20g
lemon juice 10ml
☞ For Batter
eggs 2
powdered sugar 45g
almond flour 30g
all-purpose flour 20g
whole milk 50ml
vanilla extract 10g
1 pinch of salt
melted butter 5g
✎ Instructions
1. Add cherries into a bowl, then fill the water. Allow to soak for 5-10 mins.
2. Gently to wash cherries. Remove the stem. Then rinse and dry them with paper towels or tea towel.
3. Place a cherry in the cherry pitter, the top face up. Squeeze your hand and the pitting hammer will come down on the top of the cherry, pushing the pit out of the bottom of the cherry.
4. Marinate the pitted cherries with the powdered sugar and the lemon juice for 30 mins
5. In a large bowl, add eggs and salt. Then sift powdered sugar, almond flour and flour. Whisk together until combined.
6. Pour milk, melted butter and vanilla extract. Whisk until totally smooth.
7. Meanwhile, grease the baking mold with the softened butter, then sprinkle over the sugar.
8. Place marinated cherries around the base of the mold, then pour batter over the cherries.
9. Preheat the oven to 180°C, and bake for 35~40 minutes or until lightly browned.
10. Remove from oven to cool. The clafoutis will have puffed up quite a bit and will deflate while cooling.
11. Dust with powdered sugar. Serve.
