@pujolrestaurant’s huitlacoche with black truffle. 🌽🍄 Huitlacoche (pronounced whee-tla-ko-cheh) is a corn fungus often referred to as corn mushroom, corn smut or Mexican truffle. The fungus grows naturally on organic corn ears as they ripen after the rainy season. Fresh huitlacoche is soft and velvety. It has a smoky and earthy corn meets mushroom flavor. Pujol serves their Huitlacoche with an eggplant purée and avocado, covered in freshly shaved truffles, and accompanied by blue corn tortillas.
The next course is a wild herb open papadzul (a traditional dish from the Yucatán Peninsula resembling enchiladas) with quail eggs and chiltomate.

This video shows you how to make Raw tortilla, mexican pate and cashew sauce.

Ingredients:
for the tortilla :
50g almonds
200g carrot
250g water
1 tbsp psylium
for the cashew sauce :
100g cashew nuts
100g water
1 tsp nutritional yeast
1 tsp lemon juice
a hint of salt
for the pate :
50g walnuts
50g pumpkin seeds
5g dried tomato (soak them beforehand)
15g dried tomato powder
50g onion
25g celery
5g garlic
5g ginger
1 tsp dried basil
a hint of salt
Instructions:
1. blend all the ingredients for the tortilla with a high power blender.
2. make the mixture into round shape(16cm in diameter).
3. dehydrate at 118F/48C for 6 to 8 hours.
4. put all the ingredients for the pate in a food processor and blend well.
5. blend all the ingredients for the cashew sauce until smooth with a blender.
6. plate everything on a plate.

人参 200g
水 250g
サイリウム 大さじ1
カシューソース
カシューナッツ 100g
水 100g
ニュートリショナルイースト 小さじ1
レモン果汁 小さじ1
塩 少々
パテ
くるみ 50g
かぼちゃの種 50g
ドライトマト 15g(浸水して柔らかくしておく)
ドライトマトパウダー 15g
玉ねぎ 50g
セロリ 25g
にんにく 5g
生姜 5g
ドライバジル 小さじ1
塩 少々
「作り方」
1、トルティーヤの全ての材料をハイパワーブレンダーで滑らかになるまで混ぜる。
2、生地を薄い丸型にのばす。(直径16cmほど)
3、ディハイドレーターで48℃で6〜8時間ほど乾燥させる。
4、パテの全ての材料をフードプロセッサーにかける。
5、カシューソースの全ての材料をブレンダーにかける。
6、全てを綺麗に盛り付ける。
