How to Make Kitsune Udon (juicy and tasty deep-fried Tofu) Recipe
Difficulty: Very Easy
Time: 20min
Number of servings: 2
Ingredients
2 frozen Udon noodles *I used TableMark (Katokichi), any brand is OK
2 Aburaage (deep-fried Tofu pouch)
A
* 100ml Dashi broth (using packaged dashi powder saves time)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. sugar
* 1 tbsp. soy sauce
Kaketsuyu (Udon soup)
* 500ml Dashi broth (using packaged dashi powder saves time)
* 2 tbsp. Mirin (sweet Sake)
* 1 tsp. soy sauce
* 1/2 tsp. salt
chopped green onions
Shichimi-togarashi (seven flavor chili pepper) if you like
Directions:
1. In a pot, make 600ml Dashi broth: 100ml for Aburaage, 500ml for Kaketsuyu. I used Kayanoya Dashi - https://amzn.to/3ca6ypI
2. Cut Aburaage into half. Put Aburaage in boiling water for 3 minutes to remove the excess oil. Drain in a strainer, when it becomes cool enough to handle, press with your hands to drain well. By removing excess oil, Aburaage becomes very light and soaks the seasonings very well.
3. In a small pot, put A and Aburaage, then cover with Otoshibuta (wooden drop-lid or you can substitute it with a small plate). Simmer for 7~8 minutes then stop the heat. Do not simmer it down to make it juicy and fluffy.
4. Put Kaketsuyu (Udon soup) in a pot then bring to a boil.
5. Bring water to a boil in a large pot, if your pot is small cook Udon 1 serving at a time, cook Udon on medium high heat as directed on its package. (Cooking time was 1 minute for TableMark frozen Udon) You shake the noodles in boiling water then stop the heat when they are separated.
6. Wash with cold water to remove the slimy texture. Put Udon again in boiling water to make it warm. Using the edge of a serving bowl, slide in the noodles.
7. Pour in some Kaketsuyu (Udon soup), place Aburaage, and garnish with chopped green onions. Put some Shichimi-togarashi (seven flavor chili pepper) if you like.
I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍

Kamaage Udon is Udon served in a wooden bowl with some hot cooking water. You dip Udon into dipping sauce and eat with some toppings if you like. Tempura sides are perfect. If you have ever tried it at a restaurant (such as Marugame Udon Restaurant), you know it is pretty simple yet delicious.
I was not sure if I should get the wooden bowl to recreate it at home while plastic one is available. However, by serving it in a wooden bowl, I noticed it keeps Udon hot for a long while, looking good with a nice steam rising from it. How to Make Kamaage Udon (Marugame Inspired Recipe)
Difficulty: Very Easy
Time: 5min
Number of servings: 4
Ingredients
4 frozen Udon noodles *I used TableMark (Katokichi), any brand is OK
Tsuketsuyu (Udon dipping sauce)
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
condiments of your choice (chopped green onions/chopped long onions/grated ginger/white sesame seeds/Tenkasu crunchy bits of deep fried flour-batter/etc...)
Tempura if you like
Directions:
1. In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil.
2. Bring water to a boil in a large pot, if your pot is small cook Udon 1 serving at a time, cook Udon on medium high heat as directed on its package. (Cooking time was 1 minute for TableMark frozen Udon) You shake the noodles in boiling water then stop the heat when they are separated.
3. Using the edge of a serving bowl, slide in the noodles to drain water when you serve.
4. Add some hot cooking water.
5. Serve with Tsuketsuyu (dipping sauce), condiments, and Tempura if you like.
I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍

I made this curry and rice inspired by Manga/Anime (Rokuhoudou Yotsuiro Biyori).
The curry is from scratch using curry powder (no roux). Light, refreshing, and enhances the flavor of vegetables. Increases your appetite in hot summer! Instead of deep frying the veggies, I steamed them in a frying pan. Very simple yet delicious.
This type of curry is called "Dried Curry" in Japan. It is very thick, easy to eat, and satisfying! Give it a try 😉

Japanese Summer Vegetable Curry (Rokuhoudou Yotsuiro Biyori Inspired Recipe)
Difficulty: Easy
Time: 30 min
Ingredients:
((Dried Curry))
300g (10.6oz.) ground beef and pork mixture
3 tomatoes
1 onion
1 tbsp. grated ginger
1 clove grated garlic
2 tbsp. curry powder
2 tsp. garam masala
1 tsp. Salt
2 tbsp. soy sauce
((Vegetables))
Kabocha (Japanese squash)
Okra
red bell pepper
asparagus
lotus root
eggplant
zucchini
((Others))
cooked rice
olive oil or cooking oil
Directions:
((Dried Curry))
1. Finely chop the onion. Grate ginger and garlic together.
2. Drop the tomatoes into the boiling water. Remove them after 30 seconds, when the skins begin to peel. When they become cool enough to handle, peel then dice.
3. Heat olive oil or cooking oil in a frying pan. Stir-fry onion, ginger, and garlic on low, until they turn golden. Caramelized onion adds extra sweetness to curry.
4. Add ground beef and pork mixture and cook until no longer pink. Mix in curry powder. Add the diced tomatoes and cook on medium high until the water is almost gone. Season with garam masala, salt, and soy sauce then cook for about 3 minutes. Be careful, you will lose the flavor of garam masala if you cook too much at the end.
((Vegetables))
1. Wrap Kabocha in a plastic wrap then cook in microwave for 2 minutes, then slice. Cut Okra, lotus root, and eggplant, then soak in water to remove the bitter taste and avoid the color change. Rub Okra with salt to smooth out the hairy surface, then peel the stem (you don't want to cut it off to keep the seeds in). Peel away the tough outer layer of asparagus if needed.
2. Heat olive oil in a frying pan, then steam-cook all the vegetables for about 3~5 minutes.
((Finish))
1. Serve the dried curry over the rice. Arrange the cooked vegetables.
