NASI BERIANI SIMPLE
BAHAN
Beras (saya guna Moghul Basmathi – rendam setengah jam dan tos kan)
Rempah Beriani Mak Siti
Bawang besar – dihiris
Halia – dihiris
Tomato – buang biji dan hiris
Rempah tiga sekawan (kayu manis, bunga lawang, buah pelaga)
Kiub pati ayam
Daun pandan
Susu sejat setengah tin
Marjerin
PROSES
1. Tumis Bahan
Mula-mula sekali, panaskan marjerin dan tumis rempah 3 sekawan(kulit kayu manis, bunga lawang, buah pelaga).
Rempah 3 sekawan ni maksudnya kayu manis, bunga lawang dan buah pelaga. Kalau beli yang dalam satu paket tu semua ni ada sekali.
Kemudian masukkan halia, bawang besar dan tomato.
Tumis sehingga garing ya.
2. Masukkan Rempah
Masukkan rempah beriani dan kemudian daun pandan.
Boleh guna jenama lain pun tak apa. Saya guna rempah beriani jenama Mak Siti.
3. Perasakan
Lepas tu masukkan kiub ayam dan garam. Tumis sehingga sebati.
4. Masakkan Bersama Beras
Akhir sekali tambah air dan susu sejat ke dalam tumisan.
Masukkan beras ke dalam periuk nasi dan bahan tumis tadi bersama-sama sukatan air yang cukup untuk masak nasi seperti biasa.

RESEPI AYAM GORENG MAMAK SPECIAL
BAHAN
Ayam
Serbuk kunyit
Serbuk kari
Serbuk cili
Tepung gandum
Garam
Ajinomoto
Daun kari
Halia dan bawang putih (ditumbuk kemudian diperah jus kedalam ayam)
PROSES:
1. Gaul Semua Bahan
Pertamanya, gaul sebati semua bahan.
Kalau terlalu kering, tambahkan air supaya sedikit demi sedikit supaya bancuhan agak-agak melekat pada ayam.
2. Perap
Tunggu setengah jam supaya bahan perapan tu dapat meresap dalam ayam.
3. Goreng
Lepas tu bolehlah goreng macam biasa.
Siap!

Buat nasi beriani memang tak sahlah kalau tak ada kuah dalca kan.
Ini resepi dalca simple yang saya biasa buat. Mudah je bolehlah cuba.
RESEPI KUAH DALCA
BAHAN:
3 sekawan
Kacang dal (direndam sejam dan direbus empuk)
Carrot
Kacang panjang
Kentang
Isi ayam
Rempah kari
Kunyit serbuk
Daun kari
Bawang putih, bawang merah dan halia dihiris
PROSES
1. Rebus Kacang Dal & Sayuran
Mula-mula rebus kacang dal sehingga empuk dalam sebuah periuk.
Masukkan sekali sayuran seperti carrot, kentang dan kacang panjang. Nak masuk sayur lambat sikit nanti pun boleh.
2. Tumis
Dalam kuali yang lain, tumis bawang putih, bawang merah dan halia yang telah dihiris tadi bersama daun kari dan rempah 3 sekawan.
Masukkan serbuk kari dan serbuk kunyit. Tumis semua bahan ni sehingga garing.
2. Masukkan Isi Ayam
Seterusnya masukkan isi ayam tunggu sehingga ayam masak.
3. Masukkan Bahan Tumisan Ke Dalam Rebusan Kacang Dal
Kemudian masukkan semua bahan tumisan tadi ke dalam periuk dal yang telah direbus bersama sayur.
Tunggu sehingga kentang empuk.
4. Perasakan
Last sekali letak garam dan ajinomoto. Kemudian tambah santan 3 sudu.
Perasakan secukupnya.
Siap!

Kemudian bolehlah tambah lain-lain side dish untuk nasi beriani ni contohnya papedom atau acar nanas dan timun. Nak rebus telur ke.

SIMPLE BIANI RICE
Material
Rice (I use Moghul Basmathi - soak half an hour and tos right)
Mak Siti's Biryani Spice
Big onions - sliced
Ginger - sliced
Tomatoes - remove seeds and slice
Spice three friends (cinnamon, lawang flower, cardamom)
Chicken essence cubes
Pandan leaves
Milk half a can of milk
Margarine
PROCESS
1. Stir-Fry Ingredients
First, heated the margarine and stir-fry 3 amigos (cinnamon, lawang flower, cardamom).
This 3 amigos spice means cinnamon, lawang flower and cardamom. If you buy the one in one package, all of these are available.
Then insert ginger, big onions and tomatoes.
Stir fry until it's crispy.
2. Insert Spice
Insert biryani spices and then pandan leaves.
It's okay to use other brands. I use Mak Siti's brand biryani spice.
3. Taste
Then insert chicken cubes and salt. Stir-fry until it's mixed.
4. Cooking With Rice
Finally added water and milk to the peeling.
Put the rice into the rice cooker and stir-fry ingredients just now together with the measure of water that is enough to cook rice as usual.

SPECIAL MAMAK FRIED CHICKEN RECIPE
Material
Chicken
Turmeric powder
Curry powder
Chili powder
Wheat flour
Salt
Ajinomoto
Curry leaves
Ginger and garlic (punched then squeezed juice into chicken)
PROCESS:
1. Gaul All Ingredients
First, mix all ingredients.
If it's too dry, add water to little by little so that the smoothie is quite attached to the chicken.
2. Marinated
Wait half an hour so that the marinade can be absorbed in the chicken.
3. Fry
After that you can fry it as usual.
Ready!

Making nasi biryani isn't valid if there's no hotpot gravy.
This is the recipe for simple hotpot that I used to make. It's easy to try.
DALCA SAUGHTER RECIPE
MATERIAL:
3 amigos
Nuts (soaked for an hour and soft boiled)
Carrot
Long beans
Potato
Chicken filling
Curry spice
Powder turmeric
Curry leaves
Garlic, red onion and ginger sliced
PROCESS
1. Boiled Dal Nuts & Veggies
First boiled the nuts until it was soft in a pot.
Insert vegetables like carrot, potatoes and long beans. If you want to enter the vegetable, you can do it later.
2. Stir-fry
In another pan, stir-fry garlic, red onion and ginger that was sliced just now with curry leaves and spices of 3 amigos.
Insert curry powder and turmeric powder. Stir-fry all these ingredients until it's crispy.
2. Insert Chicken Filling
Next time put the chicken in and wait until the chicken is cooked.
3. Insert Sautisan Ingredients into the Dal Peanut Boil
Then put all the grinning ingredients into the dal pot that was boiled with vegetables.
Wait until the potatoes are soft.
4. Taste
Finally put salt and ajinomoto. Then add 3 spoon of coconut milk.
Feel enough.
Ready!

Then you can add other side dishes for this nasi biryani for example papedom or pineapple pickle and cucumber. Do you want to boil eggs?

BREAKFAST - INDIAN PANCAKES
Ingredients (serves 6)
1. 1 cup Rice Flour – 578Cals
2. 1/3 cup Red Onion, diced – 22Cals
3. 1/3 cup Carrot, grated – 35Cals
4. 1 Red Chilli, finely chopped – 18Cals
5. 3 tbsp. Coriander, finely chopped – 1Cals
6. ½ tbsp. Vegetable Oil – 62Cals
7. Approx 1/3 cup Warm Water
8. A pinch of Salt to season.
120Cals per pancake
Steps:
1) In a bowl, mix the rice flour, carrots, onions, chillis and coriander. Combine well.
2) Then add dd in the water, little by little to make the dough.
3) Grease a non-stick pan with oil over medium-low heat.
4) Pour the batter equally onto the pan to cook the pancakes. This should make about 6 pancakes. Don’t worry if the pancakes do not look perfect.
5) Cook for about 3 – 4 mins on one side until it’s lightly browned. Flip over and cook until the pancake is done. Serve warm.
Instead of the typical sugar loaded sweet pancakes, this recipe is packed with vegetables! Have 3 – 4 pancakes for breakfast!
LUNCH - RICE NOODLES UPMA
Ingredients (serves 2)
1. 3oz / 85g Rice Noodles – 309Cals
2. 1 Small Onion, diced – 7Cals
3. 1 Red Chilli, finely chopped – 18Cals
4. 1 sprig of Curry Leaves – 1Cals
5. 1 tbsp. Vegetable Oil – 124Cals
6. 1 tbsp. Channa Dal / Urad Dal – 16Cals
7. ½ tsp. Cumin – 4Cals
8. ¼ tsp. Black Mustard Seeds – 12Cals
9. ¾ cup Mixed Carrot, Corn & Peas – 90Cals
10. ¼ cup Cashew Nut, halved – 160Cals
11. A pinch of Salt to season
12. 2 sprigs Coriander, chopped – 2Cals
370.5Cals per serving
Steps:
1. Soak noodles in boiling water for about 5 minutes or until soft. Drain and set aside.
2. In a non-stick pan, heat oil over medium-high heat.
3. Add in cumin, black mustard seeds and dal. Fry for about 3 – 4 minutes until dal turns lightly golden and fragrant.
4. Then stir in the onions, curry leaves, chilli, cashew nuts and mixed vegetables. Sautee very quickly for 2 - 3 minutes until cashews are slightly roasted.
5. Don’t forget to season with salt.
6. Mix in the noodles and stir until all the ingredients are evenly distributed. Go head and taste your dish, add more salt if needed.
7. Garnish with coriander and serve warm.
Feel free to add a different variety of vegetables. You can even mix protein into the recipe such as tempeh, tofu, egg or meat. Bring this out to work or school!
DINNER - CHICKPEAS SWEET POTATO GREENS IN COCONUT MILK
Ingredients (serves 4)
1. 1 medium Onion, diced – 44Cals
2. 1 Garlic Clove, peeled – 4Cals
3. 1 Ginger piece, thumb-sized, peeled & sliced – 6Cals
4. 1 Red Chilli, finely sliced -18Cals
5. ½ tbsp. Vegetable Oil – 62Cals
6. ½ tsp. Turmeric Powder – 4Cals
7. 1 tsp. Ground Cumin – 8Cals
8. 1 tsp. Garam Masala – 7Cals
9. 2 cups Pumpkin, peeled & diced – 60Cals
10. 1 can Chickpeas, rinsed & drained – 360Cals
11. 150g Sweet Potato Greens – 53Cals
12. 1 cup Coconut Milk – 410Cals
13. 1 cup Vegetable Stock – 31Cals
14. A pinch of salt
267Cals per serving
Total Cals with Rice: 471
Total Cals with 2 Chapati: 487
Steps:
1. In a food processor, add in the onion, garlic, ginger and chilli. Blend very quickly until it becomes a paste.
2. In a large non-stick pan, heat oil over medium-high heat. Fry the paste for 1-2 minutes until fragrant and then add in the spices – turmeric, cumin and masala. Continue to fry very quickly for another minute.
3. Add pumpkin and chickpeas. Stir and mix well.
4. Add the coconut milk and stock. Bring to a simmer and allow all the ingredients to cook for about 20 - 30 minutes until the pumpkin softens and the sauce thickens. Don’t forget to stir occasionally.
5. Once the pumpkin has soften, add in the sweet potato greens and cook until wilted. Season with salt. Serve warm.
Chickpeas are a great source of protein for vegetarians. You can serve this with a cup of rice or 1 – 2 chappati.
