「但我相當同意烏爾加夫特的看法,他認為,培養人肉的想法,不只是心理上的挑釁,也是人類學的挑釁,「因為它迫使我們思考,假使我們也能成為一種肉,那麼做為人類的我們到底是什麼?......也許吃組織培養人肉的概念真正讓人不安的,並不是我們可能吃掉其他人或自己,而是技術可能會給我們對於人類到底是什麼的概念,引入一種新的可塑性。」
事實上,可能吃掉自己或其他人,當然也會令人不安,否則炭治郎也不用一直強調禰豆子不會吃人,並為此賭上性命保證。但無論如何,細胞培養肉的出現不只挑戰了我們對人類的定義,也帶來一種新的可塑性,帶來重新思考肉是什麼,人又是什麼的契機。而我們每個人的答案,毫無疑問都會鑲嵌進未來的那面鏡子,映照出我們此刻的選擇,我們的恐懼與迷惘、欲望與代價。」

Mattson is a food innovation company that creates food for almost all of our favorite grocery stores and restaurants. N8 grabs a bite with Mattson’s food technician Maddison Gurrola and vice president Al Banisch to discuss how they keep sustainability in mind when developing food. They dig in meat alternatives, food packaging, and upcycled byproducts from manufacturing.
