夏日飲食重點
雖然未食「五月糉」,但也彷彿呼吸到炎夏的暑氣。天氣悶熱令人胃口變差,外出只想吃喝各式甜品、特飲,回家時又按捺不住從冰箱取出冰凍汽水大口大口地喝,這都是因為夏天出汗較多、易耗氣傷津,會出現口渴、口乾等症狀,為了解暑就容易一時吃太多生冷。中醫理論指出「汗為心之液」,所以初夏時節需要注意養心,也要避免滋膩食物。另外夏天亦容易引發皮膚病,可適量食用清熱利濕的食材,忌食發物。天氣再熱,都要每天按時進食三餐保護脾胃運作呢!
夏日宜適量進食:
夏季當造瓜果-冬瓜、西瓜、青瓜、菠蘿、節瓜、絲瓜
苦味食材-苦瓜、芹菜、萵筍、枸杞葉
酸味食材-菠蘿、奇異果、山楂、檸檬、百香果、芒果
養心食材-紅豆、草莓、紅葡萄、紅棗
寒性蔬菜- 芽菜、馬蹄、番茄、白菜、白蘿蔔、菠菜
夏日健脾胃養心餐單
早:烚番薯 / 瑤柱小米粥 / 番茄湯米粉
午:銀魚仔蒸肉餅 / 咕嚕魚塊 / 絲瓜豆腐泡飯
下午茶:一碗份量兩款水果,例如車厘茄、櫻桃、草莓、紅葡萄等等
晚:涼拌苦瓜 / 蒜蓉炒紅莧菜 / 粉葛紅蘿蔔綠豆湯
建議每天飲用米水,全日任何時候皆可飲用。有助消化、轉化並吸收營養、排出多餘水分!
Summer Diet Pointers
It may not quite be time to eat rice dumplings yet, but you can definitely feel the heat in the air. Hot weather may decrease your appetite. You might crave for desserts and specialty drinks while you are out, and head straight to the fridge for a cold soda when you are home. You are thirsty and have dry mouth because you sweat too much in summer, resulting in loss of qi and fluid. You might try to cool down by eating many cold/raw food. Chinese medicine believes that ‘sweat is the heart’s fluid’. So it is important to calm your mind and avoid nourishing food in early summer.
Otherwise, skin allergies are prone to act up in summer. Appropriately consume ingredients that can clear heat and promote diuresis as well as avoid stimulating foods. No matter how hot it is, remember to eat three meals on time to protect spleen and stomach.
Foods to eat appropriately in the summer:
Seasonal melons and fruits- winter melon, watermelon, cucumber, pineapple, hairy gourd, luffa
Bitter- bitter melon, celery, lettuce, wolfberry leaves
Sour- pineapple, kiwi, hawthorn, lemon, passion fruit, mango
Heart nourishing ingredients- red beans, strawberries, red grapes, red date
Cold in nature- sprouts, water chestnuts, tomato, bak choy, white radish, spinach
Summer menu to strengthen the spleen and stomach and calm the mind
Breakfast: steamed sweet potato / dried scallops millet porridge / tomato soup rice noodles
Lunch: steamed meatloaf with ice fish / sweet and sour fish / tofu soup rice with luffa
Afternoon Tea: two types of fruits in a bowl, such as cherry tomatoes, cherries, strawberries, red grapes, etc.
Dinner: cold bitter melon / fried red amaranth with garlic / mung beans soup with carrot and kudzu
It is recommended to drink rice water at any time in the day to improve digestion and relieve water retention.

「處」解作躲藏、終止,處暑意味著暑氣到此為止,一旦進入這個節氣,日間氣溫仍然偏熱,但到晚上就漸漸出現秋意,雨量逐漸減少。氣候處於由熱轉涼的交替時期,飲食以清熱安神為主,多吃雪耳、百合、蓮子、蜂蜜、海帶、菠菜、糯米、芝麻等食物。
秋天開始,很多人都會出現懶洋洋的疲勞感,謂之「秋乏」,起居作息要相應調整,將夏天的晚睡調整成早睡早起,有助肺氣舒展。日夜溫差大,要注意睡覺時蓋好被子。
溫馨提示:
・天氣開始乾燥,喝杯蜂蜜水
・每日飲米水,脾胃自然好
・多吃清熱安神食物,來碗雪耳百合糖水

During the seasonal change, focus your diet to clear heat and calm the mind. Try to have more snow fungus, lily bulbs, lotus seeds, honey, seaweed, spinach, glutinous rice and sesame.
As fall begins, a lot of people may feel tired and lazy. Try to adjust your rest time and start to sleep earlier and wake up earlier to help your lung qi. The temperature difference between day and night is higher so be sure to use a proper blanket.

- 菠菜 (切段)
- 冬菇 (洗净,浸泡至软)
- 冬菇水
- 蒜片 (少量,拿来提味)
- 蒜香油
- 鸡胸肉 (腌制:盐,胡椒,酱油,薯粉,一点水)
- 蛋(1颗,不要完全打散)
- 水 (3/4杯)
【调味料】
- 盐
- 鱼露
【方法】
- 材料一一切一切
- 爆香蒜片
- 炒香冬菇
- 先放入菜梗超软,接下来叶子的部位
- 加入2撮盐(自己再衡量哦)
- 加入冬菇水和水
- 煮滚;之后转小火,加入鸡肉,小火慢滚至鸡肉熟透
- 再一次转大火,汤非常滚的时候加入蛋;不要急着搅拌;等蛋成型之后在搅拌
就这样完成了✅最后再加入一点蒜香油就很好喝了!

すまし仕立て雑煮
材料:
鶏もも肉(ひとくち大) 200g
大根(0.5cm輪切り・花型で抜く) 8枚
人参(0.5cm輪切り・花型で抜く) 8枚
生しいたけ(軸を落とす) 4個
小松菜(さっと茹でて3-4cm幅に切る) 2株
角もち 4個
合わせ出汁 1000ml
しょうゆ 大さじ2
塩 小さじ1
かまぼこ 4枚
いくら 適量
1.鍋に人参と大根を入れ、合わせ出汁を注いで中火で10分ほど煮る。
2.大根と人参に火が通ったら鶏もも肉を入れ、アクを取りながら5分ほど煮る。
3.鶏もも肉に火が通ったらしいたけを加え、しょうゆと塩を加えてひと煮立ちさせる。
4.焼いた角もちを入れた器に汁を注いで具材を並べる。小松菜、かまぼこ、いくらを添えたら、完成!
白味噌仕立て雑煮
材料:
人参(0.5cm輪切り) 1/2本
里芋(0.5cm輪切り) 2-3個
丸もち 4個
昆布だし 1000ml
白味噌 150g
三つ葉(茎を結ぶ) 8本
1.人参と里芋は塩を加えた水から10分ほど茹でて火を通す。
2.鍋に(1)を入れ、昆布だしを注いで温め、白味噌を溶き入れる。
3.やわらかく茹でた丸もちを入れた器に汁を注ぎ、具材を並べたら、完成!
あずき汁雑煮
材料:
あずき 2カップ
砂糖 240g
塩 小さじ1
水 800ml
丸もち 4個
1.鍋に洗ったあずきを入れ、浸るくらいの水を注いでいちど沸騰させる。
2.湯を捨てて分量の水を加え、弱火で約40分、アクを取りながら煮る(水が減ったらその足し入れ、常にあずきが水をかぶっているようにする)。
3.あずきがやわらかくなったら砂糖と塩を加えて10分ほど煮る。
4.やわらかく茹でた丸もちを入れた器に注ぎ入れたら、完成!
赤味噌仕立て雑煮
材料:
かぶ(小) 4個
丸もち(茹でる) 4個
ゆず皮(千切り) 適量
昆布だし 1000ml
赤味噌 100g
1.かぶは茎を2cmほど残して皮をむき、縦に4等分に輪切りにする。
2.鍋に(1)を入れて昆布だしを注ぎ、火が通るまで弱火〜中火で加熱する。かぶが透き通ったら赤味噌を溶き入れる。
3.やわらかく茹でた丸もちを入れた椀に汁を注いでかぶを盛り、ゆずの皮を添えたら、完成!
JAPANESE MOCHI SOUP 4 WAYS
Clear Mochi Soup
Servings: 4
INGREDIENTS
200 grams (7 ounces) chicken thigh, cubed
8 slices radish, cut with flower mold
8 slices carrot, cut with flower mold
4 shiitake mushrooms
4 mochi (square-shaped rice cake), toasted
1000 milliliters (4.2 cups) dashi broth
2 tablespoons soy sauce
1 tablespoon sake
1 teaspoon salt
Garnish
2 bunch of mustard spinach, chopped
4 slices fish cakes
Salmon roe
PREPARATION
1.Put the carrot, radish, and dashi broth in the pan. Boil 10 minutes in medium heat until these are thoroughly cooked.
2.Add chicken thigh, then boil for 5 minutes.
3.Combine soy sauce, sake, and salt. Boil them.
4.Toast a piece of mochi for 4 minutes. Put a mochi in the serving bowl. Pour over soup. Garnish with mustard spinach, fish cake and salmon roe. Enjoy!
White Miso Mochi Soup
Servings: 4
INGREDIENTS
½ carrot, sliced
2-3 taros, sliced
4 mochi (round-shaped rice cake), boiled
1000 milliliters (4.2 cups) dashi broth
150 grams (5.3 ounces) white miso
Garnish
Japanese parsley
PREPARATION
1.Combine carrot and taro in the pan, then pour water over. Add salt to taste and boil until tender. Drain water, keeping the vegetables in the pan.
2.Pour dashi broth into the pan and add white miso by thinning it out with some of the dashi, stirring vigorously to incorporate smoothly into the broth.
3.Boil a piece of mochi for 4 minutes. Put a mochi in the serving bowl, pour over soup. Enjoy!
Red Miso Mochi Soup
Servings: 4
INGREDIENTS
4 turnips, round sliced
4 mochi (round-shaped rice cake), boiled
Yuzu peel, julienned
1000 milliliters (4.2 cups) dashi broth
100 grams (3.5 ounces) red miso
PREPARATION
1.Put turnips and dashi broth in the pan. Boil on medium heat until thoroughly cooked.
2.Add red miso by thinning it out with some of the broth, stirring vigorously to smoothly incorporate it in the broth.
3.Boil a piece of mochi for 4 minutes. Put a mochi in the serving bowl, pour soup over. Garnish with yuzu peel. Enjoy!
Azuki Red Beans Mochi Soup
Servings: 4
INGREDIENTS
2 cups azuki red beans, washed
240 grams (8.4 ounces) sugar
1 teaspoon salt
800 milliliters (3.4 cups) water
4 mochi (round-shaped rice cake), boiled
PREPARATION
1.Put azuki red beans and water in the pan. Boil for 40 minutes over medium heat until beans become soft.
2.Add sugar and salt, boil for another 10 minutes.
3.Boil a piece of mochi for 4 minutes. Put a mochi in the serving bowl, spoon over beans. Enjoy!
