金銀菜湯清熱潤肺
白菜雖然一年四季都見到,但冬季當造的出品更為光鮮飽滿,它有清熱除煩、生津利水、通便的功效,煲湯的話通常會配搭菜乾,與白菜合稱為金銀菜,菜乾為白菜曬乾而成,功效與新鮮白菜相若,令湯的味道更濃郁。金銀菜適合秋冬乾燥天氣食用,有效清理臟腑之熱,紓緩因乾燥引起的咽喉發炎、乾咳等症狀。湯水中加入滋陰潤肺的雪耳、潤肺健脾的無花果,有助紓緩乾燥症狀。
清熱潤肺湯水小貼士:
適當地添加清熱潤肺的食材如雪梨、海底椰、花旗參、霸王花等。
金銀菜雪耳馬蹄湯
功效:清熱潤肺,紓緩皮膚乾燥、口乾、眼乾等症狀。
材料:大型白菜1棵、白菜乾40克(約1両)、紅蘿蔔2根、雪耳1朵、馬蹄8粒、蜜棗2枚
做法:
1. 所有材料洗淨,紅蘿蔔去皮切塊;雪耳浸泡至軟身後去蒂;馬蹄去皮,用刀背拍一拍備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Fresh and dried bak choy soup to clear heat and moisten the lungs
Chinese cabbage, bak choy, can be found throughout the four seasons but the harvests during winter are exceptionally fresh. It can clear heat, relieve stress, stimulate saliva production, and improve bowel movement.
When making soup, bak choy is normally coupled with dried bak choy, hence it is called ‘the gold and silver vegetables’ in Cantonese. Dried bak choy ’s function is similar to that of the fresh ones, but they add more flavor to the soup.
Both fresh and dried bak choy are suitable for consumption during the dry weather in autumn and winter. They can effectively clear heat from the organs, relieve dryness-related symptoms such as throat inflammation and dry cough. Adding some lungs-moistening snow fungus, as well as figs which can also moisten the lungs and strengthen the spleen, into the soup can relieve the dry condition of the body.
Tips for soup to clear heat and moisten lungs:
Appropriately add in ingredients such as pear, palm fruit, American ginseng and night-blooming cereus etc.
Bak choy soup with snow fungus and water chestnut
Effects: Clears heat and moistens lungs. Relieve symptoms of dry skin, dry mouth and dry eyes.
Ingredient: 1 big fresh bak choy, 40g dried bak choy, 2 carrots, 1 snow fungus, 8 water chestnuts, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel carrots and cut into pieces. Soak snow fungus in water for half a day until soften, then cut off black bit from bottom. Peel chestnuts.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.

It’s so enjoyable to have Ryan Lau sitting next to me & chit chat about our favorite whiskies together. 🥳🥃 Tried Kinahan’s Kasc Project, the 1st hybrid cask in the world. What’s it? The cask is individually constructed from a mix of 5 different types of trees, including Portuguese oak, American oak, French oak, Hungarian oak & chestnut oak. It’s very unusual! Aged for at least 5 years, it’s a bit XO feel, with honey, pear, apple, tropical fruit, mineral & spices notes. I also tried Kinahan’s Irish Single Malt Black Oak, which is black oak from Portugal, aged for 7 years & limited to 350 bottles, it’s also special, with rich toasty, charcoal, spices, dark chocolate, dates, caramel & fig notes. The finish has coffee beans notes. I enjoyed the 3-course dinner a lot, esp the beef tartar & the USDA boned ribeye! 😋😋 gotta save some space for Irish Coffee pairing with desserts! 秋日補氣健脾湯
秋天宜養肺,因為秋天對應的人體臟腑為肺,秋氣與人體的肺氣相通,秋燥容易傷及肺陰,令人出現口乾舌燥、鼻咽乾燥、乾咳等症狀。肺氣不足的人容易出現反覆感冒、多汗、怕風、容易疲倦等症狀,連進行行山這類低強度活動,都可能出氣短、頭暈的情況,就需要好好養肺,適量進食有補氣健脾作用的食物例如人參、花旗參、淮山、北芪、紅蘿蔔、山藥等。平日宜飲食清淡,多喝溫水,忌吃生冷、重口味及辛辣食物。平日可以多按足三里穴,有補中益氣、通經活絡、激發氣血生化及運行的作用。
補氣健脾湯水小貼士:
適當地添加補氣健脾的食材如靈芝、黨參、海底椰、栗子等。
太子參沙參無花果湯
功效:補氣潤肺健脾,紓緩口乾、容易乾咳等症狀。
材料:紅蘿蔔1根、雪梨2個、太子參20克、沙參15克、栗子80克、無花果乾3枚
做法:
1. 所有材料洗淨,紅蘿蔔去皮切塊
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Autumn soup to nourish the qi and strengthen the spleen
Autumn is the best time to take care of the lungs as the season is closely related to the organ. The dry autumn weather might hurt the yin of the lungs, hence causing individuals to experience dry mouth, dry nasal passage and dry cough.
Individuals with the lack of qi in the lungs might experience cough, excessive sweating, aversion to cold and fatigue repeatedly, and they might even experience shortness of breath and dizziness during low intensity activities such as hiking. Therefore, it is important to take good care of the lungs.
Consume food that can nourish the qi and strengthen the spleen, such as ginseng, American ginseng, Chinese yam, Astragalus root, carrot, and Chinese yam. Have a light diet, drink more warm water, and avoid heavy flavoured and spicy food. Massage the ‘san li’ acupoint regularly, as it is beneficial for the qi, and can improve the Meridian’s circulation, invigorate the qi and the blood, as well as the circulation.
Appropriately add in ingredients such as lingzhi, codonopsis root, palm fruit, chestnut etc.
Radix pseudostellariae and glehnia root soup with fig
Effects: Nourishes qi, moistens lungs and strengthens the spleen. Relieves symptoms such as dry mouth and dry cough.
Ingredients: 1 carrot, 2 pears, 20g radix pseudostellariae, 15g glehnia root, 80g chestnuts, 3 dried figs
Preparation:
1. Rinse all ingredients thoroughly. Peel carrot and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.

香ばしいタルトにアーモンドクリームとラム酒と栗の甘露煮を入れます。
アーモンドパウダーは軽くローストしているので香ばしく、とても素敵な甘さになります。

Almond powder is lightly roasted it will be very nice sweetness
材料(15㎝のタルト型2台分)
※作りやすい分量なので半分は冷凍保存します。
◆タルト
バター 85 g
粉砂糖 55g
塩 少々
卵黄 1個
薄力粉 140g
バニラエッセンス 少々
◆アーモンドクリーム
バター 45g
粉砂糖 40g
卵 35g
アーモンドパウダー 45g
薄力粉 7g
ラム酒 10ml
◆栗の甘露煮 11個
◆あんずのシャム 60g
作り方
◆タルト
①室温でクリーム状に柔らかくしたバターに粉砂糖を入れて混ぜ合わせたら卵黄を加えます。
②①に薄力粉を振り入れて良くすり混ぜて二つに分けてラップをして冷蔵庫で30分寝かせます。
※作りやすい分量なので半分は冷凍保存しています。
③めん棒でタルト型に合うように伸ばします。
④タルト型にセットしたらはみ出た部分はカットします。
⑤フォークで全体に穴を開けておきます。
◆アーモンドクリーム
①アーモンドパウダーは160℃のオーブンで7分焼いておきます。
②ボウルに室温に戻してクリーム状にしたバターを入れ、そこへ粉砂糖を入れて良く混ぜます。
③割りほぐした卵を2回に分けて入れながら滑らかになるまで良く混ぜます。
④アーモンドパウダーと薄力粉をふるいにかけて入れ、ゴムベラで良く混ぜてラム酒を入れます。
◆仕上げ
①タルトの上にアーモンドクリームを入れて、その上に汁を切った栗の甘露煮を乗せます。
②余熱をした180℃のオーブンで35分焼きます。
③あんずのジャムは電子レンジ500wで30秒程温めて良く混ぜてタルトの上に塗ります。
